  • 3 medium potatoes
  • 1/2 carrot
  • 1 tablespoon curry powder (generous)
  • Pinch of black pepper
  • 1/4 tablespoon salt
  • 3 tablespoons cooking oil
  • 3 tablespoons water

Step 1

First, wash the potatoes and carrot thoroughly. You can peel the potatoes or leave the skin on. Slice them into bite-sized pieces, about 0.5 cm thick, or julienne them. Julienne the carrot to a similar thickness. Julienne vegetables tend to absorb seasonings better and have a pleasing texture.

Step 2

To prevent the julienned potatoes from sticking together and to remove excess starch, soak them in cold water for about 10 minutes. After soaking, rinse the potatoes lightly under running water and drain them completely. This step ensures the potatoes cook up fluffy and separate when stir-fried.

Step 3

Heat 3 tablespoons of cooking oil in a pan over medium heat. Add the drained potatoes and julienned carrots. Stir-fry until they turn a light golden brown. Continue stir-frying until the edges of the potatoes look slightly translucent and release a nutty aroma. Carrots cook faster than potatoes, so add them after the potatoes have started to soften slightly.

Step 4
