Today, we’re making a wonderfully simple and delicious Chwinamul (Wild Aster) salad! I’ll be using freshly pressed sesame oil I received from my in-laws over the weekend to give it that irresistible nutty aroma. This dish is a fantastic way to enjoy the fresh flavors of spring.

Seasoning

  • Minced Garlic 1 Tbsp
  • Salt 1/2 Tbsp
  • Toasted Sesame Seeds (ground) 1 Tbsp
  • Sesame Oil 1.5 Tbsp
  • Sugar 1/2 Tbsp

Cooking Instructions

First, wash the Chwinamul thoroughly under running water. Bring a pot of water to a boil and add 1/2 Tbsp of salt. Add the washed Chwinamul and blanch for exactly 1 minute. If your Chwinamul is young and tender, reduce the blanching time to avoid it becoming too soft and mushy. This short blanching time helps preserve its crisp texture and fresh aroma.

Immediately after blanching, rinse the Chwinamul under cold running water to cool it down quickly. Rinsing in cold water further enhances its crispness and helps to remove any potential bitterness or astringency.

Drain the Chwinamul briefly in a colander. Then, gently squeeze out the excess water by hand. Be careful not to squeeze too hard, as this can break the leaves; aim to remove most of the water while keeping some moisture intact.

Now it’s time to season the Chwinamul. Place the prepared Chwinamul in a mixing bowl. Add all the seasoning ingredients except for the sesame oil: 1 Tbsp minced garlic, 1/2 Tbsp salt, 1 Tbsp toasted sesame seeds, and 1/2 Tbsp sugar.

Put on a pair of disposable gloves and gently toss the ingredients together until the seasonings are evenly distributed throughout the Chwinamul. Avoid over-mixing. Finally, drizzle in 1.5 Tbsp of fragrant sesame oil and give it one last gentle toss. This adds a wonderful nutty flavor and a glossy finish.
