Aromatic Chwinamul Rice: A Special Parent’s Day Feast
Make this Parent’s Day special with delicious Chwinamul Rice for the family
On Parent’s Day, I made Chwinamul Rice, a dish my mother absolutely loves. Even our kids enjoy it! This recipe makes about 6 servings. It’s a wonderful way to show your appreciation with a hearty and flavorful meal.
Main Ingredients- 500g blanched Chwinamul (Korean aster)
- 540g rice (3 cups)
- 600ml water (3 cups)
Chwinamul Seasoning- 1.5 Tbsp soup soy sauce
- 1 tsp sea salt
- 1 Tbsp perilla oil
- 1.5 Tbsp soup soy sauce
- 1 tsp sea salt
- 1 Tbsp perilla oil
Cooking Instructions
Step 1
Note: Besides the 3 cups shown in the picture, there is an additional 1 cup of rice, making a total of 4 cups.
Step 2
First, rinse the rice and let it soak. While the rice is soaking, gently squeeze out excess water from the blanched Chwinamul and chop it into bite-sized pieces. For a softer texture that’s easier for children or elders to eat, chop the greens finely.
Step 3
Soaking the rice for 10 minutes will result in a chewier and more delicious texture.
Step 4
In a bowl, gently mix the chopped Chwinamul with soup soy sauce, sea salt, and perilla oil. This seasoning helps to enhance the natural aroma of the greens.
Step 5
Now, let’s cook the rice. In your electric pressure cooker, place the soaked rice first. Then, spread the seasoned Chwinamul evenly on top. For a richer flavor, use rice water (water used to rinse rice) instead of plain water for the cooking liquid. Cook using the ‘standard cooking’ mode.
Step 6
While the rice is cooking, prepare a flavorful dipping sauce. Combine soy sauce and water in a 2:1 ratio. Add finely chopped green onions, minced garlic, a pinch of red pepper flakes, a tiny bit of sugar, and finish with perilla oil or sesame oil and toasted sesame seeds. Mix well, ensuring it’s not too salty and has a pleasant taste.
Step 7
The vibrant green topping is finely chopped blanched Chwinamul, added for garnish and extra flavor. Mixing this chopped Chwinamul into the dipping sauce will further enhance its aroma.
Step 8
The electric pressure cooker has finished cooking the delicious Chwinamul Rice.
Step 9
Using a rice paddle, gently mix the rice from the bottom up to avoid mashing the grains. Ensure the Chwinamul and rice are evenly distributed.
Step 10
Now it’s time to enjoy your delicious Chwinamul Rice! Serve warm with the prepared dipping sauce on the side, and savor a meal full of spring’s fresh flavors.
