This is a special Okonomiyaki recipe that incorporates plenty of savory chives into the classic Osaka-style dish, giving it a flavor profile similar to Korean chive pancakes. It boasts a crispy exterior and a moist interior, with the sweetness of vegetables and the fragrant aroma of chives creating a universally loved taste. Its ease of preparation makes it a perfect choice for home parties or special meals!
Batter Ingredients- 2 cups Okonomiyaki flour (or pancake mix)
- 1 cup Tempura flour (or all-purpose flour)
- 2 tablespoons Curry powder
- 2 large Eggs
Cooking Instructions
Step 1
In a large bowl, combine the Okonomiyaki flour, tempura flour, and curry powder. Mix well. Crack in the 2 eggs and whisk until smooth, ensuring there are no lumps. (Tip: Pre-mixing the dry ingredients helps create a smoother batter.)
Step 2
Drain the canned corn, but add both the corn kernels and any remaining liquid to the batter. This will add a delightful ‘pop’ and moisture to the Okonomiyaki.

Wash and thoroughly drain the cabbage, onions, and bean sprouts. Add them to the bowl with the batter. Finely chop the pickled radish and add it to the mixture. (Substitution Tip: For a different flavor, you can use finely chopped dill pickles or spicy pickled peppers instead of pickled radish. You can also omit it entirely if preferred.)
Step 4
Heat a frying pan over medium-high heat and add a generous amount of cooking oil. Spread the washed and drained chives evenly across the pan. Cooking the chives first will release their fragrant aroma.

Pour the vegetable and batter mixture from the bowl evenly over the layer of chives in the pan. Gently spread the top with a spatula to create a neat shape.

Cook over medium-low heat until the bottom is golden brown and slightly crispy (you’ll see the edges turning brown). Then, using two spatulas, carefully flip the Okonomiyaki over. (Tip: A well-heated pan prevents sticking and makes flipping easier.)

Cook the second side for about 5-7 minutes, or until golden brown and cooked through. Once both sides are nicely browned, carefully transfer the Okonomiyaki to a serving plate.
