Aromatic Chive and Perilla Leaf Pancake: A Taste of Nostalgia on Rainy Days

The most nostalgic summer dish for me is the spicy chive jangtteok my grandmother used to make. With the rainy season here, I’ve been thinking about it a lot. Main Ingredients- Chives 200g
- Perilla leaves (Bang-a) 100g
- Cheongyang peppers 70g
- Pancake mix 1.5 cups
Seasoning- Doenjang (Soybean paste) 1 Tbsp
- Gochujang (Chili paste) 1/2 Tbsp
- Gochugaru (Chili powder) 1/2 Tbsp
- Doenjang (Soybean paste) 1 Tbsp
- Gochujang (Chili paste) 1/2 Tbsp
- Gochugaru (Chili powder) 1/2 Tbsp
Cooking Instructions
Step 1
For the perilla leaves, separate the leaves from the stems and use only the soft leaf parts. Wash them thoroughly and pat them dry.
Step 2
Wash the chives clean and chop them into short pieces, about 1-2 cm long. Finely mince the Cheongyang peppers to add a spicy kick. Chop the perilla leaves into manageable pieces as well.
Step 3
In a bowl, combine 1.5 cups of pancake mix with 1.5 cups of water. Add 1 Tbsp of doenjang, 1/2 Tbsp of gochujang, and 1/2 Tbsp of gochugaru, and whisk until smooth and lump-free. Then, add all the prepared chives, perilla leaves, and minced Cheongyang peppers to the batter and mix well. Heat a frying pan over medium heat with a generous amount of oil. Ladle portions of the batter onto the hot pan and spread them thinly into round shapes. Cook until golden brown on both sides. It’s important to spread the batter thinly so it cooks through evenly.
Step 4
Once the edges of the jangtteok start to turn golden brown and crispy, carefully flip them over. Cook the other side until it’s also golden brown and crisp. Ensure both sides are evenly browned.
Step 5
Your delicious Chive and Perilla Leaf Jangtteok, with its spicy and savory doenjang flavor, is ready! It’s wonderful as a hearty side dish for rice, or paired with a cold makgeolli (rice wine) for an excellent appetizer. Enjoy this flavorful jangtteok that evokes fond memories of the past.
