Easy Homemade Aromatic Chamnamul Salad
Even if you find the strong aroma of chamnamul (Korean potherb) challenging, a quick blanch followed by seasoning transforms it into a delicious and palatable side dish. Elevate your appetite with this recipe, brimming with the essence of spring.
Main Ingredients- 1 bunch Chamnamul (Korean potherb, approx. 100g)
Seasoning Ingredients- 1 tsp Sea salt (preferably Guk-ganjang or fine sea salt)
- 1/2 tsp Minced garlic
- 1 Tbsp Plum extract (Maesilcheong)
- 1 Tbsp Sesame oil
- 1 Tbsp Toasted sesame seeds

Cooking Instructions
Step 1
Prepare one bunch of fresh chamnamul. When trimming, remove any tough stems and focus on the tender leaves and softer parts of the stems for a more pleasant texture.
Step 2
Rinse the chamnamul thoroughly under running water multiple times to remove any dirt or debris. Handle the delicate leaves gently.
Step 3
Bring a pot of water to a boil with 1 tablespoon of salt. Quickly blanch the chamnamul for just about 15-20 seconds, until it slightly wilts. Be careful not to overcook, as it will become mushy. Immediately plunge the blanched chamnamul into cold water to stop the cooking and cool it down. Gently squeeze out excess water with your hands, then cut it into bite-sized pieces, about 3-4 cm long.
Step 4
Place the squeezed chamnamul in a mixing bowl. Add 1 teaspoon of sea salt, 1/2 teaspoon of minced garlic, 1 tablespoon of plum extract, 1 tablespoon of sesame oil, and 1 tablespoon of toasted sesame seeds.
Step 5
Gently mix and toss the ingredients with your hands, ensuring the seasoning coats the chamnamul evenly. Avoid vigorous mixing, which can crush the delicate leaves.
Step 6
Taste and adjust seasoning if necessary, adding a little more salt if needed. Transfer the aromatic chamnamul salad to a serving dish. This dish is a delightful side for rice or a wonderful addition to bibimbap.
