Aromatic Brown Rice Coconut Milk Rice
Making Fragrant Coconut Milk Rice Using Brown Rice
We made coconut milk rice to serve with coconut chicken curry! It’s super easy! Originally, it’s supposed to be made with Jasmine rice, but we used brown rice since we didn’t have any. Enjoy this simple yet flavorful recipe!
Rice Cooking Ingredients- 1.5 cups brown rice (approx. 400cc)
- 1.5 cups coconut milk (300ml)
- 1.5 cups water (300ml)
- 1 tsp sugar
- 1 pinch salt
Cooking Instructions
Step 1
In a heavy-bottomed pot (cast iron recommended!), combine 1.5 cups of coconut milk, 1.5 cups of water, a pinch of salt, and 1 teaspoon of sugar. Stir gently over medium heat for 1-2 minutes until the sugar and salt are completely dissolved. You’ll start to smell the wonderful aroma of the coconut milk.
Step 2
Once the sugar has dissolved, add the brown rice (which has been soaked in water for 30 minutes). Stir gently to combine, and as soon as it begins to bubble, cover the pot tightly with a lid. Reduce the heat to low and let it cook for about 20-25 minutes. It’s crucial not to open the lid while it’s steaming!
Step 3
Dinner is served! See how easy that was? Once the cooking time is up, open the lid to reveal perfectly cooked, fragrant rice with a beautiful sheen. Gently fluff the rice with a spatula before serving. This rice is a perfect accompaniment to coconut chicken curry or other Southeast Asian dishes. Enjoy!
