Ingredients for Aromatic Field Herb and Beef Stir-fry- 150g Beef (thinly sliced for bulgogi or japchae)
- 2 Tbsp Soy Sauce
- 2 Tbsp Mirin (or cooking wine)
- Garlic, minced, to taste (approx. 1 Tbsp)
- 2 Tbsp Oligodang (corn syrup) or honey
- A little Sesame Oil (approx. 1 Tbsp)
- 1 Korean Chili Pepper (Cheongyang chili, optional for a spicy kick)
- 1/3 stalk Green Onion
- 1/4 Onion
- 1/4 Yellow Bell Pepper
- 1/4 Red Bell Pepper
- 1 handful Fresh Field Herbs (Naengi, approx. 50g)
- Sesame Seeds, crushed, for garnish
- Pinch of Black Pepper
Cooking Instructions
Step 1
Begin by preparing your vegetables. Slice the green onion diagonally. Cut the onion and bell peppers (both yellow and red) into thin strips. Clean the fresh field herbs thoroughly, trimming any tough roots. Chop them into bite-sized pieces, about 5cm long. If using Korean chili peppers, mince them finely.
Step 2
Pat the beef dry with paper towels to remove excess moisture. Place the beef in a bowl and add the minced garlic, soy sauce, mirin, oligodang, a dash of sesame oil, and a pinch of black pepper. Gently mix and marinate for about 10 minutes. This step helps tenderize the beef and infuse it with flavor.
Step 3
Heat a pan over medium heat. Add the marinated beef and stir-fry until it’s browned on all sides. Be careful not to cook on excessively high heat, as this can brown the outside before the inside is cooked through.
Step 4
Once the beef is partially cooked, add the sliced onion, bell peppers, and green onion to the pan. Continue to stir-fry for about 2-3 minutes, or until the vegetables are tender-crisp. You can add the minced Korean chili pepper at this stage if you desire a spicy element.
Step 5
When all the ingredients are well combined and cooked, gently add the fresh field herbs. Stir-fry briefly for just 30 seconds to 1 minute, until the herbs are slightly wilted but still vibrant. Overcooking will make them mushy and diminish their flavor. Finish by drizzling in the remaining sesame oil and sprinkling with crushed sesame seeds.
Step 6
Your aromatic Field Herb and Beef Stir-fry is ready! Transfer it to a serving plate. For an extra touch of visual appeal, you can sprinkle more toasted sesame seeds on top. Serve hot with a side of rice for a satisfying and flavorful meal.
