  • Raw Soy Bean Flour 1/2 cup
  • Water 5 cups
  • Soup Soy Sauce 1 Tbsp
  • Natural Sea Salt 2 tsp

We’ve prepared Korean Angelica Tree Shoots (Dureup) that are more bitter and have a stronger aroma than the regular Aralia. You can also make this with regular Aralia if you prefer. The taste might vary slightly depending on the type of Aralia used.

Slightly trim the woody ends of the Aralia where soil might be attached. This simple step completes the preparation of the Aralia.

Bring a pot of water to a boil. Add the thicker stem parts of the Aralia first and blanch them briefly, just until they are tender enough for a fingernail to press into them. This should only take about 30 seconds to 1 minute. Immediately rinse the blanched Aralia under cold running water to stop the cooking process and drain them well in a colander.

For easier eating and better texture, cut the blanched thicker stem parts in half and then tear them with a knife, or simply slice them.

Slice the prepared Aralia into pieces about 3 cm long. Adjust the length to your preference for comfortable eating.

Place the sliced Aralia in a bowl. Add a pinch of salt (in addition to the measured salt) and the raw soy bean flour. Cover the bowl or shake it gently to evenly coat the Aralia with the soy bean flour mixture. This coating will help thicken the soup.

Bring 5 cups (1,000ml) of water to a boil in a pot. Once boiling, add the Aralia coated with soy bean flour. Maintain medium heat.

Scrape out any remaining soy bean flour from the bowl by adding a little water to rinse it, and pour this into the pot as well. Using all the soy bean flour enhances the soup’s flavor.

If you prefer a richer and thicker soup, you can add an extra 1-2 tablespoons of raw soy bean flour at this stage. This step is optional and can be adjusted to your taste.

Season the soup with 1 tablespoon of soup soy sauce and 2 teaspoons of natural sea salt. The soup soy sauce adds depth and color, while the sea salt adjusts the final taste. Taste and add more salt if needed, or a little water if it’s too salty.
