Main Ingredients- Fresh Crown Daisy: 150g
- Soft Tofu: 1 block (approx. 160g)
- Coarse Sea Salt: 1 Tbsp (for blanching)
Seasoning Ingredients- Minced Garlic: 1 tsp
- Fish Sauce or Korean Soup Soy Sauce: 1 Tbsp (for seasoning)
- Toasted Sesame Seeds: 1 tsp
- Sesame Oil: 1 Tbsp

Cooking Instructions
Step 1
Bring a pot of water to a rolling boil. Add 1 tablespoon of coarse sea salt to the boiling water. Carefully add the washed crown daisy and blanch for about 30 seconds to 1 minute. Be careful not to overcook, as it can become mushy. Immediately rinse the blanched crown daisy under cold running water to cool it down. Gently press out as much excess water as possible.
Step 2
Place the tofu in a bowl. Mash it gently using your hands or a fork until it’s mostly broken down but still slightly chunky. (Tip: Using silken tofu will result in an even creamier texture.)
Step 3
Add the drained crown daisy to the mashed tofu. Pour in 1 tablespoon of fish sauce (or Korean soup soy sauce). Gently mix everything together with your hands, as if massaging the ingredients, until well combined. Avoid pressing too hard, which can break down the crown daisy too much.

Finally, drizzle in 1 tablespoon of sesame oil and sprinkle with 1 teaspoon of toasted sesame seeds. Give it one last gentle toss to combine everything beautifully. Your delicious Crown Daisy and Tofu Salad is ready!
