Main Ingredients- 300g fresh shiitake mushrooms
- 50g Cheongyang chili peppers (or adjust to taste)
- 2 Tbsp sliced or minced garlic
Seasoning & Other Ingredients- 1 Tbsp cooking oil
- 1 tsp soy sauce
- 1 tsp oyster sauce
- 1 Tbsp rice wine (mirin or sake)
- 1 tsp sugar
- 1 tsp chicken stock (or water)
- Pinch of black pepper
- Cornstarch slurry (1/2 tsp cornstarch + 1/2 tsp water) for thickening
- A little sesame oil
- 1 Tbsp cooking oil
- 1 tsp soy sauce
- 1 tsp oyster sauce
- 1 Tbsp rice wine (mirin or sake)
- 1 tsp sugar
- 1 tsp chicken stock (or water)
- Pinch of black pepper
- Cornstarch slurry (1/2 tsp cornstarch + 1/2 tsp water) for thickening
- A little sesame oil
Cooking Instructions
Step 1
Start by preparing 300g of fresh shiitake mushrooms. Select ones that are slightly opened. Clean the mushrooms and trim off the tough ends of the stems.
Step 2
Slice the shiitake mushrooms into strips about 0.5 cm thick. Bring a pot of water to a boil with a pinch of salt. Briefly blanch the sliced mushrooms for about 30 seconds to 1 minute. This step enhances their chewy texture and cleans them. Drain the blanched mushrooms and rinse under cold water, then squeeze out any excess water thoroughly.
Step 3
Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the sliced garlic (or minced garlic) and Cheongyang chili peppers (seeds removed and thinly sliced – adjust for your spice preference). Sauté until the garlic is fragrant, being careful not to burn it.
Step 4
Add 1 tsp of soy sauce and 1 tsp of oyster sauce to the pan and quickly mix. Stir in 1 Tbsp of rice wine (mirin or sake) to add depth of flavor; the alcohol will evaporate, leaving behind a pleasant taste.
Step 5
Add the blanched shiitake mushroom strips to the pan.

Turn the heat up to high and stir-fry briskly for about 1-2 minutes. This high-heat cooking will evaporate any remaining moisture and bring out the wonderfully chewy texture of the shiitake mushrooms. Keep stirring to prevent burning.
Step 7
For richer flavor, add 1 tsp of chicken stock (or 1 Tbsp water if unavailable), 1 tsp of sugar, and a pinch of black pepper. Stir everything well to combine.
Step 8
To give the dish a glossy finish and slight thickness, slowly drizzle in the cornstarch slurry (mix 1/2 tsp cornstarch with 1/2 tsp water) around the edges of the pan while stirring quickly. Adjust the amount to achieve your desired sauce consistency.
Step 9
Just before turning off the heat, drizzle in a little sesame oil for a fragrant finish. Adding it at the end preserves its aroma.
Step 10
Transfer the delicious stir-fried shiitake mushrooms to a serving plate. They are best enjoyed warm.
