  • 8 Frozen Shrimp, thawed
  • 2 Dried Vietnamese Chilies
  • 6cm White Spring Onion
  • 1 Tbsp Oyster Sauce
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Brown Rice Oil
  • 1 tsp Sesame Oil
  • 70ml Rice Wine (Cheongju)

Begin by washing the aero (chamnamul) thoroughly. Separate the stem and leaf portions by cutting them into two parts; this technique helps the seasoning penetrate better and improves the texture.

Drain the thawed frozen shrimp using paper towels to remove excess moisture. Then, soak them in 70ml of rice wine (cheongju) for 2-3 minutes. This step removes any fishy odor and helps achieve a perfectly plump texture. Crumble the dried Vietnamese chilies and thinly slice the white spring onion.
