Financier Batter Ingredients

  • 50g High-Quality Almond Flour
  • 50g Cake Flour (or low-gluten flour)
  • 28g Gorgonzola Cheese (crumbled or grated)

Sweet Topping Sauce

  • 2 Tbsp Honey (Acacia or Chestnut honey recommended) (approx. 30ml)
  • 2 Tbsp Apple Jam (approx. 30ml)

Cooking Instructions

In a saucepan, melt the 110g of unsalted butter over medium-low heat. Once melted, increase the heat slightly and continue to stir. You’ll notice brown foam forming on the surface. As the foam subsides and the butter becomes clear with a nutty aroma, quickly remove it from the heat and transfer it to another bowl. Strain the clear butter through a fine-mesh sieve, discarding the milk solids at the bottom. This ‘brown butter’ is key to the financier’s deep flavor.

In a bowl, combine the 95g of egg whites, 100g of granulated sugar, and 2 pinches of salt. Using a whisk, gently mix until the sugar is mostly dissolved and a slight froth forms. Avoid over-whipping; the goal is to incorporate the sugar smoothly.

Add the 25g of apple jam to the egg white mixture. Whisk until well combined and smooth, ensuring there are no lumps of jam.

Sift the 50g of almond flour and 50g of cake flour into the mixture from step 2. The savory, robust flavor of gorgonzola will beautifully complement the sweetness of the apple and butter.
