  • 10 cloves garlic

  • 1.5 Tbsp cooking oil
  • 2 Tbsp soy sauce
  • 1 Tbsp plum extract
  • 1/2 Tbsp ginger syrup
  • 1 Tbsp cooking wine (or Cheongju)
  • 1/2 Tbsp red pepper flakes
  • 1/3 Tbsp sesame oil

Cooking Instructions

First, thinly slice the 10 cloves of garlic. Heat 1.5 Tbsp of cooking oil in a pan over medium-low heat. Add the sliced garlic and stir-fry gently, being careful not to burn it, to infuse the oil with the garlic’s aroma. This step significantly deepens the garlic flavor.

Once the garlic is fragrant, add the medium-sized anchovies to the pan and stir-fry together. Removing the heads and guts of the anchovies can reduce any bitterness and result in a cleaner taste, but it’s also fine to use them as they are if preparation is bothersome. Stir gently with a spatula to prevent the anchovies from sticking to the pan.

Now it’s time for the key seasonings. Add 2 Tbsp of soy sauce, 1 Tbsp of plum extract, 1/2 Tbsp of ginger syrup, and 1 Tbsp of cooking wine to the pan. Stir everything together with the anchovies and continue to stir-fry. You can adjust the amount of soy sauce depending on the saltiness of the anchovies or your personal preference. Stir continuously to ensure all ingredients are well coated with the sauce.
