Essential Ingredients

  • 1/2 cup dried anchovies for broth (gutted)
  • 30 fresh perilla leaves
  • 1/2 onion
  • 1 cup anchovy broth (approx. 200ml)

Seasoning Ingredients

  • 2 Tbsp soy sauce
  • 1/2 Tbsp fish sauce
  • 1/2 Tbsp fine gochugaru (Korean chili flakes)
  • 1/2 Tbsp plum extract
  • 1/2 Tbsp minced garlic
  • 1 Tbsp chopped green onions (or scallions)
  • 1 Tbsp sesame oil
  • 3 Tbsp anchovy broth
  • 1 Cheongyang pepper (or spicy green chili)

Cooking Instructions

First, prepare the vegetables. Peel and wash the onion, then slice it thinly into strips. Remove the stems from the Cheongyang pepper and slice it finely to add a spicy kick.

Let’s make the flavor-packed seasoning. In a bowl, combine the soy sauce, fish sauce, gochugaru, plum extract, minced garlic, chopped green onions, sesame oil, and the additional 3 Tbsp of anchovy broth. Mix well with a spoon until you have a delicious seasoning paste.

We’ll roast the anchovies to remove any fishy smell and enhance their savory flavor. Place the gutted dried anchovies in a pan and lightly stir-fry over medium-low heat, being careful not to burn them. Once lightly toasted, remove the anchovies from the pan and set aside.

Now it’s time to stew the perilla leaves. Lightly heat a pan and add a small amount of anchovy broth. Arrange the washed and dried perilla leaves in layers, one on top of the other, in the pan. Cook briefly until the perilla leaves start to wilt.

Combine all ingredients to develop the flavors. Spread the prepared seasoning evenly over the perilla leaves. Add the sliced onions and the roasted anchovies on top. Cover with a lid and simmer over low heat, allowing the ingredients to meld together.
