Main Ingredients- Rolled oats flour 100g (grind into a fine powder)
- Almond soy milk solids (prepare to your preference)
- Plain water 100ml (for the dough)
- Chilled almond soy milk 200ml (for the broth)
Seasoning- Pinch of roasted salt (to adjust flavor)
- Pinch of roasted salt (to adjust flavor)
Cooking Instructions
Step 1
First, prepare the rolled oats, which are the base of this dish. Rolled oats offer a pleasant chewiness and are rich in nutrients compared to regular oats.
Step 2
Place the prepared rolled oats into a grinder and grind them as finely as possible. A fine powder is ideal for making the dough.
Step 3
In a large bowl, combine the finely ground oat flour, 100ml of cold plain water, and the almond soy milk solids you prepared. Knead gently with your hands until a smooth dough forms. Ensure it’s not too sticky, aiming for a supple consistency.
Step 4
Once the dough is ready, shape it into a long, elongated form that’s easy to pinch off for the sujebi. You can stretch the dough with your fingers.
Step 5
Gently press the ends of the elongated dough flat with your thumb and forefinger. This helps the sujebi cook evenly and improves its texture.
Step 6
Drop the prepared dough pieces one by one into a pot of generously boiling water. Stir occasionally to prevent them from sticking together. The sujebi are cooked when they float to the surface. Boil for about 5-7 minutes.
Step 7
Once cooked, remove the sujebi from the boiling water and immediately rinse them under cold running water. This step makes the noodles wonderfully chewy. For an extra refreshing touch, briefly soak them in ice water to chill thoroughly.
Step 8
Finally, place the chilled oat sujebi into a serving bowl. Pour a generous amount of the chilled almond soy milk over them. Season with a pinch of roasted salt to taste, if desired. Enjoy your refreshing and chewy Almond Soy Milk Cold Sujebi!
