Creative Use for Frozen Tteokguk Rice Cakes: Making Delicious Tteokbbong
Transform leftover tteokguk rice cakes into a delightful snack with just an air fryer! These rice cakes become crispy, chewy ‘tteokbbong’ with a perfect balance of sweet and salty flavors. It’s an incredibly easy recipe suitable for kids’ snacks or a delightful accompaniment to drinks.
Ingredients- 40 frozen tteokguk rice cakes
- 1 Tbsp brown sugar
- 2 pinches of salt
Cooking Instructions
Step 1
Start by preparing the frozen tteokguk rice cakes. To prevent them from sticking together, soak them in lukewarm water for about 10 minutes, rather than cold water. This softens the rice cakes, making them easier to handle. After 10 minutes, remove the rice cakes, rinse them lightly under running water to remove excess starch, and drain them thoroughly in a colander. Pat the surface of the rice cakes completely dry with paper towels; this is crucial for achieving a crispy texture when cooked.
Step 2
Get a large zip-top bag or a resealable plastic bag ready. Using a spacious bag will make it convenient to toss the rice cakes with the seasoning.
Step 3
Place the dried tteokguk rice cakes into the plastic bag. Add 1 tablespoon of brown sugar and 2 pinches of salt. Seal the bag securely and shake it up and down, or gently knead it, to ensure that each rice cake is evenly coated with the brown sugar and salt mixture. This step creates the foundation for the delicious sweet and savory ‘dan-jjjal’ (sweet and salty) flavor profile.
Step 4
Line an air fryer basket or baking tray with parchment paper. Arrange the seasoned tteokguk rice cakes in a single layer, making sure they don’t overlap. Keeping them spaced apart is important for even cooking and crispiness; if they are clumped together, they may not cook uniformly or could become soggy.
Step 5
Preheat your air fryer or oven to 180°C (350°F). Place the rice cakes inside and cook for approximately 10 minutes. You can check on the rice cakes halfway through and flip them for more even browning. They are ready when they turn golden brown and the edges look slightly cracked and crispy. (Cooking time may vary depending on your appliance, so adjust as needed.)
Step 6
Serve immediately while warm for a crispy exterior and chewy interior – your ‘tteokbbong,’ or grilled tteokguk rice cakes, are ready! They will become firmer and crispier as they cool. Enjoy your delicious snack!
