  • 2 Tbsp cornstarch
  • Pinch of salt

First, carefully remove the stems from the Korean green peppers. Then, using a fork, prick the surface of the peppers in a few places. This helps the seasoning penetrate inside and prevents them from bursting during cooking. Lightly sprinkle the pricked peppers with salt to season and let them sit for a short while to absorb the flavor.

Gently pat the surface of the seasoned Korean green peppers with a paper towel to remove any excess moisture. It’s important to do this thoroughly, as excess water can prevent the cornstarch from adhering properly. Coat the peppers evenly with 2 tablespoons of cornstarch.
