For the Pork Ribs- 1kg Pork ribs
- 1 Tbsp Sugar (for blood removal)
- 1 Tbsp Herb salt
- 1 Tbsp Curry powder
- 3 Tbsp Olive oil
- Pinch of Black pepper
For the All-Purpose Dipping Sauce- 3 Tbsp Sesame Tonkatsu sauce
- 2 Tbsp Ketchup
- 0.5 Tbsp Oyster sauce
- 0.5 Tbsp Soy sauce
- 1 Tbsp Volcano sauce (adjust spiciness)

Cooking Instructions
Step 1
Let’s start by removing the blood from the pork ribs. Rinse the ribs thoroughly under cold water, then soak them in cold water for 1 hour. Adding 1 tablespoon of sugar to the water can help with blood removal. It’s a good idea to change the water once during soaking.
Step 2
Now, let’s marinate the ribs for added flavor. In a bowl, combine the herb salt, curry powder, and olive oil with the drained ribs. Mix well with your hands to coat evenly. Let the marinated ribs rest in the refrigerator for 30 minutes. This allows the seasonings to penetrate deeply, resulting in more delicious ribs.
Step 3
It’s time to cook the ribs in the air fryer. Place the marinated ribs in the air fryer basket and cook at 180°C (350°F) for 10 minutes. Then, flip them over and cook for another 10 minutes.
