I recently remembered how delicious the braised mackerel with radish was, and decided to try making it glazed with teriyaki sauce this time! Using an air fryer makes the outside crispy and the inside moist, and with pre-portioned mackerel fillets, the cooking process is much simpler. Served with plenty of shredded green onions, it’s even more flavorful. Try making this easy homemade mackerel teriyaki grill recipe!
Main Ingredients- 1/2 to 1 portion of prepared mackerel (fillet)
- A little bit of pancake mix (or flour)
- A little cooking oil
Teriyaki Glaze- 1 Tbsp water
- 2 Tbsp soy sauce
- 2 Tbsp mirin (rice wine)
- 1 Tbsp sugar
- 1 Tbsp water
- 2 Tbsp soy sauce

Cooking Instructions
Step 1
If using frozen mackerel, transfer it to the refrigerator the day before to thaw naturally. If you’re in a hurry, you can quickly thaw the unopened package under cold running water.
Step 2
Rinse the thawed mackerel lightly under cold running water. Since it’s usually pre-cleaned fillet mackerel, there might not be much additional preparation needed. If there are any blood clots or impurities, wash them off thoroughly.
Step 3
Pat the rinsed mackerel completely dry with paper towels. (*Tip: Unseasoned mackerel can benefit from a light rub of salt, mirin, or pepper for pre-seasoning. However, since we’re applying a teriyaki glaze, you can skip this step for this recipe.)
Step 4
Brush both sides of the dried mackerel evenly with a thin layer of cooking oil. You can use a kitchen brush, or even your hands with disposable gloves or a plastic bag.
Step 5
Lightly sprinkle some pancake mix (or flour) over the oiled mackerel, ensuring it’s evenly coated without overlapping.
Step 6
Wearing disposable gloves, gently rub the pancake mix onto both sides of the mackerel. It’s best to use only a small amount of pancake mix initially and add more if needed, rather than pouring out too much at once.
Step 7
Place the prepared mackerel into the air fryer without preheating and cook at 200°C (390°F) for 15 minutes. Flip the mackerel halfway through to ensure even cooking.
Step 8
Cooking times may vary slightly depending on your air fryer model, so adjust as needed. Be careful not to overcook or burn it.
Step 9
Now, let’s make the teriyaki glaze. (This amount is sufficient for half a mackerel and can easily cover a whole one.) In a mixing bowl, combine 1 Tbsp water, 2 Tbsp soy sauce, 2 Tbsp mirin, and 1 Tbsp sugar. Stir well until the sugar is completely dissolved.
Step 10
Pour the teriyaki glaze into a non-stick frying pan (no oil needed) and bring it to a gentle simmer over medium-low heat. Keep the heat low to prevent the sauce from burning.

(*Tip: Last time, I stir-fried chili peppers in this sauce first to infuse the flavor. You can skip this or add ingredients like chili peppers, thinly sliced green onions, or onions to your preference for added flavor.)
Step 12
Once the glaze is simmering, add the air-fried mackerel to the pan. Coat both sides of the mackerel evenly with the sauce and let it simmer for a short while to allow the flavors to meld.
