Special Lamb Soy Sauce

  • 2 Tbsp sugar
  • 1/2 cup (approx. 120ml) soy sauce
  • 1/2 cup (approx. 120ml) vinegar
  • 1/4 portion onion, finely minced
  • 1/2 Cheongyang chili pepper, seeds removed and finely minced (adjust to taste)
  • Water (for adjusting consistency)

Lamb Steak & Garnish

  • 2-3 French rack lamb chops
  • 1/2 stalk green onion
  • 1/4 onion
  • 3-4 cloves garlic
  • 2-3 mushrooms (king oyster, button, etc.)
  • 3-4 Korean green chili peppers (kkwarigochu) or your favorite vegetables (asparagus, bell pepper, etc.)
  • 1 Tbsp lemon juice
  • Herbs & salt (or salt, pepper) to taste
  • 2-3 Tbsp olive oil
  • A pinch of parsley flakes (for garnish)

Cooking Instructions

Step 1

First, let’s make the special soy sauce that will enhance the flavor of your lamb steak. In a small saucepan, combine 2 tablespoons of sugar, 1/2 cup of soy sauce, and 1/2 cup of vinegar. Stir well. Add the finely minced onion and Cheongyang chili pepper. (If you like it spicy, you can leave the seeds in the chili pepper.)

Heat over medium-low heat, stirring until the sugar is completely dissolved. Once it starts to simmer, cook for about 1-2 more minutes, then turn off the heat and let it cool. If the sauce is too thick, gradually add water to reach your desired consistency. This soy sauce is not only great for lamb but can also be used for other meat and fish dishes.

Prepare the lamb chops. Use kitchen towels to thoroughly pat away any surface blood from the lamb chops. Removing the blood helps reduce any gamey odor.

Now it’s time to season the lamb. Sprinkle herbs & salt (or salt and pepper) evenly over the entire lamb chop. If you’re concerned about any gamey smell, applying 1 tablespoon of lemon juice all over the lamb is a good idea. Finally, generously coat with olive oil to ensure a moist finish after cooking. (This step is similar to seasoning a regular beef steak.)

Prepare the vegetable garnish to accompany the steak. Cut the green onion into large pieces, and slice the onion into thick strips or wedges. Lightly crush the whole garlic cloves with the side of a knife or leave them whole. Wash and pat dry mushrooms and Korean green chili peppers, or any other favorite vegetables.

Preheat your air fryer to 200°C (400°F). Place the prepared lamb chops in the air fryer basket and cook at 200°C for about 15 minutes. The fat will drip away during cooking, resulting in a leaner cut.

After 15 minutes, flip the lamb chops. Once flipped, arrange the prepared vegetable garnishes (green onion, onion, garlic, mushrooms, Korean green chili peppers, etc.) around the lamb chops. Drizzling a little olive oil over the vegetables will make them more delicious.

With the vegetables in place, set the air fryer to 200°C (400°F) again and cook for an additional 5 minutes. This will ensure the vegetables are nicely browned along with the lamb. Adjust the cooking time based on your air fryer’s performance and the thickness of the lamb chops.

Beautifully arrange the cooked lamb chops and vegetable garnishes on a plate. Crossing the bones over each other or laying them down can create a more professional presentation. Tip: Arranging the bones this way makes the dish look even more appetizing.

Check the doneness. It’s important to ensure the inside of the lamb is cooked through. Cooking times can vary depending on the type and power of your air fryer, so you can slightly adjust the time next time you make this dish for a more perfect result.

It’s best to adjust the cooking time according to your personal preference. I prefer mine medium-rare, and this time they seemed a bit more well-done, so I plan to reduce the air fryer time from 15 minutes to about 12 minutes next time. Find your perfect level of doneness!
