Ingredients- 2 medium potatoes
- 1 tsp salt
- 1 tbsp cooking oil
- Pinch of dried parsley (optional)

Wash the potatoes thoroughly under running water. Peel them thinly using a peeler or a paring knife.

This is the crucial step for achieving ultimate crispiness! Using a mandoline slicer, a vegetable slicer, or a potato peeler, slice the potatoes as thinly as possible. Uniform thickness is key to ensure even cooking and a crispy texture.

Place the thinly sliced potatoes in a bowl and sprinkle evenly with 1 teaspoon of salt.

Pour enough cold water into the bowl to completely submerge the potato slices. Gently stir with your hands to dissolve the salt and help release the starch from the potatoes. Let the potatoes soak for about 10 minutes to remove excess starch.
