We’ve grilled fresh gizzard shad until perfectly crispy using an air fryer. While there are small bones, everyone knows how delicious gizzard shad is! This simple recipe is perfect for both adults and children to enjoy. Experience the rich, nutty flavor of gizzard shad with minimal effort.
Main Ingredients- 3 fresh Gizzard Shad (Godeungeo)
- A little chopped green onion (for garnish)
- Plenty of onion peels (for the bottom of the air fryer)

Cooking Instructions
Step 1
First, wash the onion peels you’ll use for the bottom of the air fryer thoroughly and squeeze out any excess water. Clean the gizzard shad under cold running water, remove the scales, and clean out the innards. Make 3-4 shallow cuts on both sides of the fish’s body. This helps the seasoning penetrate better and ensures a nice shape when cooked. Sprinkle herb salt evenly on both sides of the fish. Place the prepared gizzard shad on top of the onion peels at the bottom of the air fryer basket. Cook at 180°C (350°F) for 10 minutes. The onion peels help to remove any fishy odors and keep the fish moist.
Step 2
After 10 minutes, carefully open the air fryer and gently flip the gizzard shad over. Place it back into the air fryer and cook for another 10 minutes at 180°C (350°F). This ensures that the skin becomes crispy and the inside is cooked through and remains tender.
Step 3
Arrange the beautifully cooked gizzard shad on a serving plate. Sprinkle the finely chopped green onions over the fish as a garnish; this adds a nice color and fresh aroma.
