Let’s make the quintessential chicken dish, ‘banban’ style, but as a delicious glazed fried chicken using an air fryer! This recipe elevates young chickens, infusing them with a savory and sweet glaze for a restaurant-quality taste at home. Perfect for sharing!
Main Ingredients- 1 Young Chicken (approx. 700-800g)
- Herb Salt (to taste)
- Oil Spray (or cooking oil)
- Water (for blanching, ample amount)
Sweet & Spicy Glaze Sauce- 120ml Water (approx. 1/2 cup)
- 1/2 Tbsp Gochujang (Korean chili paste, approx. 5g)
- 1 Tbsp Soy Sauce (approx. 10g)
- 3 Tbsp Ketchup (approx. 30g)
- 3 Tbsp Sugar (approx. 30g)
- 1/2 Tbsp Minced Garlic (approx. 5g)
- 120ml Water (approx. 1/2 cup)
- 1/2 Tbsp Gochujang (Korean chili paste, approx. 5g)
- 1 Tbsp Soy Sauce (approx. 10g)
- 3 Tbsp Ketchup (approx. 30g)
- 3 Tbsp Sugar (approx. 30g)
- 1/2 Tbsp Minced Garlic (approx. 5g)
Cooking Instructions
Step 1
First, trim the tail end of the thoroughly washed young chicken. Then, cut the chicken in half lengthwise. Rinse the chicken under cold running water, paying attention to the areas around the bones, to remove any blood or impurities. After rinsing, place the chicken in boiling water for about 5 minutes to blanch it. This step helps remove impurities and any gamey smell, ensuring a cleaner flavor.
Step 2
Pat the blanched chicken dry with paper towels. Season the chicken inside and out generously with herb salt. Next, coat the chicken’s surface lightly with oil spray or brush with cooking oil. Place the chicken in the air fryer and cook at 170°C (340°F) for 20 minutes. After 20 minutes, flip the chicken and cook the other side for another 20 minutes at the same temperature, until it’s golden brown and crispy.
Step 3
While the chicken is cooking, prepare the delicious glaze sauce. In a wok or saucepan, combine 120ml of water, 1/2 Tbsp gochujang, 1 Tbsp soy sauce, 3 Tbsp ketchup, 3 Tbsp sugar, and 1/2 Tbsp minced garlic. Mix well. Heat this mixture over medium-low heat, stirring constantly, until it thickens to a glaze consistency. Once the sauce has thickened, add the air-fried chicken to the wok or pan. Using chopsticks or tongs, toss the chicken to coat it evenly with the glaze.
