Remember the Galbi-jjim dumplings Chef Lee Yeon-bok made on ‘Will It Sell in Korea?’ not too long ago? I made galbi-jjim patties from the leftover filling, shaped them like mini hamburgers, and froze them. Time passed, and I didn’t get around to making those hamburger steaks. Then, my sister gave me some seasoned bellflower root (doraji) in gochujang sauce. I tried it fried in the air fryer and it was quite enjoyable, though the flavor was strong. That gave me an idea! I decided to wrap the bellflower root with my frozen galbi-jjim mixture and air fry it. The result? It looked just like a pig’s tail! The spicy, savory seasoned bellflower root was encased in the tender galbi-jjim, creating a unique and delicious dish. Enjoy this simple yet special treat!
Main Ingredients- 10 seasoned bellflower roots (or deodeok)
- 400g ground pork
- 300g ground beef
Cooking Instructions
Step 1
First, prepare the seasoned bellflower root (doraji). This recipe uses bellflower root seasoned in gochujang sauce that I received from my sister. If you’re making it yourself, feel free to adjust the seasoning to your preference. If the seasoning is quite potent, lightly pan-frying it can make it more palatable.
Step 2
Take the galbi-jjim mixture (intended for dumplings) from the freezer and let it thaw naturally in the refrigerator. Step 3
Combine the ground pork and ground beef for the galbi-jjim. Add the minced onion, minced Cheongyang peppers, soy sauce, oyster sauce, minced garlic, minced ginger, cooking wine, sugar, chopped green onions, starch, and sesame oil to the meat mixture. Knead the mixture well until it becomes sticky and cohesive. Once the mixture is ready, place a seasoned bellflower root in the center and wrap it thickly with the galbi-jjim mixture, shaping it like a pig’s tail. Ensure the bellflower root is completely enclosed.
Step 4
Preheat your air fryer to 180°C (350°F). Place the wrapped galbi-jjim onto the air fryer basket. Cook for approximately 20 minutes in total, as the patties are quite thick. Turning them halfway through ensures even browning and cooking. You can also air fry any remaining seasoned bellflower root alongside the galbi-jjim to serve as a side.
Step 5
Your delicious seasoned bellflower root galbi-jjim is ready! The exterior is nicely browned and slightly crisp, while the interior remains moist and tender, complemented by the spicy kick of the bellflower root. Arrange the air-fried bellflower root on top of the galbi-jjim for an appealing presentation. This unique dish is perfect for special occasions, a fun snack for kids, or even as an appetizer with drinks!
