Crispy and Juicy Air Fryer Fried Chicken Recipe
I decided to try making delicious fried chicken using my new air fryer! After a few unsuccessful attempts, I’m sharing the recipe that finally worked. Get ready for homemade fried chicken that’s crispy on the outside and tender on the inside!
Main Ingredients- 1 whole chicken, cut into pieces (for stew, about 1kg)
- 3 Tbsp commercial chicken coating mix
- 1 Tbsp cooking oil
Brine Ingredients- 1.5 cups water (300ml)
- 1/2 cup soju (100ml)
- 1.5 Tbsp coarse salt
- 2 cloves garlic, minced
- 1/2 onion, thinly sliced

Cooking Instructions
Step 1
Brining the Chicken: Rinse the chicken pieces thoroughly under running water and pat them dry. In a bowl, combine 1.5 cups of water, 1/2 cup of soju, 1.5 Tbsp of coarse salt, 2 minced garlic cloves, and the thinly sliced half onion. Stir well to create the brine. Submerge the chicken pieces in this brine and let them soak for about 2 hours. This process helps to remove any unwanted odors and seasons the chicken evenly from the inside out, making it more flavorful.
Step 2
Coating with Flour: Gently drain any excess liquid from the brined chicken. Place the chicken pieces in a bowl and sprinkle 3 Tbsp of the commercial chicken coating mix over them. Ensure each piece is evenly coated. Let the chicken sit for about 5 minutes after coating. This allows the coating to absorb some moisture from the chicken, which helps it adhere better and become crispier when cooked.
Step 3
Tip for Even Coating: While it might seem easier to put everything in a plastic bag and shake, it’s better to coat each chicken piece individually by hand. This ensures a more even and thicker coating, contributing to a delightful crispy texture.
Step 4
Applying Oil: Put on disposable gloves. Pour 1 Tbsp of cooking oil into your hands and gently massage it onto the coated chicken pieces. This light oil coating helps the chicken brown beautifully and achieve a crispier finish in the air fryer.
Step 5
Preparing the Air Fryer: Line the air fryer basket with parchment paper. Using parchment paper makes cleanup significantly easier, and you’ll still get wonderfully crispy chicken. If you prefer an extra-crispy result and don’t mind the extra scrubbing, you can omit the parchment paper. Arrange the prepared chicken pieces in the air fryer basket, making sure they are not overcrowded. Allow some space between each piece for even cooking.
Step 6
First Cook (Browning): Preheat your air fryer if necessary. Cook the chicken at 200°C (390°F) for 10 minutes. This initial high-heat cooking helps to brown the exterior.
Step 7
Second Cook (Ensuring doneness): After 10 minutes, flip the chicken pieces. Reduce the temperature to 180°C (355°F) and cook for another 10 minutes. This ensures the chicken is cooked through and juicy on the inside while maintaining its crispiness on the outside. You may need to adjust the cooking time slightly depending on the size of your chicken pieces and your air fryer’s performance.
