Main Ingredients- Chicken thigh meat, 1 pack (approx. 7 pieces)
- Salt, 1/2 tsp
- Black pepper, 1 pinch
- Wet breadcrumbs, 500ml
- Eggs, 2
- All-purpose flour, 200ml
Savory Brunch Sauce- Mayonnaise, 4 Tbsp
- Soy sauce, 1 Tbsp
- Sesame seeds, 2 tsp
- Sesame oil, 1/2 tsp
- Sugar, 1/2 Tbsp
- Vinegar, 1/2 Tbsp
- Whole grain mustard, 1 tsp
Accompaniments & Garnish- Balsamic glaze (optional)

Cooking Instructions
Step 1
We’re using chicken thigh meat purchased from E-Mart Traders. Do you know the difference between chicken drumettes (whole leg with bone) and thigh meat (boneless meat)? Knowing this distinction can make your cooking much easier. To save the hassle of deboning at home, we’ve bought a pack of boneless thigh meat.
Step 2
Rinse the chicken thigh meat thoroughly and pat it dry. Lightly prick the skin side with the tip of a knife. This prevents it from shrinking too much during cooking and helps it become extra crispy.
Step 3
For the thicker parts of the thigh meat, thinly slice them open like a butterfly or flatten them out. This ensures even cooking and makes it easier to shape into cutlets.
Step 4
Season the prepared chicken thigh meat with 1/2 tsp of salt and a pinch of black pepper on both sides. Marinate briefly to avoid losing too much moisture.
Step 5
Now, prepare three shallow bowls. In the first, place 200ml of all-purpose flour. In the second, whisk 2 eggs to create an egg wash, removing any stringy bits. In the third, put 500ml of wet breadcrumbs.
Step 6
First, dredge the seasoned chicken thigh meat evenly in the flour. This flour coating helps the egg wash adhere better.
Step 7
Next, dip the floured chicken into the egg wash, ensuring it’s fully coated. Let any excess egg wash drip off.
Step 8
Finally, coat the chicken with breadcrumbs. Place the chicken in the breadcrumbs and press down firmly with your hands to ensure the breadcrumbs stick well and don’t fall off. A thicker breadcrumb coating will result in a crispier texture.
Step 9
Repeat this process for all the chicken pieces, preparing them for cooking.
Step 10
Set aside the breaded chicken cutlets once they are ready.
Step 11
Preheat your air fryer to 180°C (350°F). Place the chicken cutlets in the air fryer and cook for 10 minutes. Flip them over and cook for another 10 minutes at 180°C (350°F). Total cooking time is approximately 20 minutes.
Step 12
Tip: If the temperature is too high, the breadcrumbs might burn. It’s best to maintain 180°C and adjust the cooking time as needed. If the breadcrumbs start browning too quickly, you can slightly lower the temperature or cover loosely with foil.
Step 13
While the chicken is cooking, let’s prepare the sauce. In a bowl, combine 4 Tbsp mayonnaise, 1 Tbsp soy sauce, 2 tsp sesame seeds, 1/2 tsp sesame oil, 1/2 Tbsp sugar, 1/2 Tbsp vinegar, and 1 tsp whole grain mustard. Mix well until smooth to create a delicious savory sauce.
Step 14
For an extra touch, you can pan-fry some bacon until crispy while waiting for the chicken. This adds another layer of flavor and texture to your brunch.
Step 15
Arrange a bed of fresh lettuce or salad greens on a large plate. Place the crispy chicken cutlets, cooked bacon, and a portion of warm steamed rice. Drizzle the prepared savory sauce generously over the chicken cutlets to complete your delightful home brunch!
