Main Ingredients- Pork ribs 650g
- Well-fermented aged kimchi 600g
- Potatoes 200g
- Onion 60g
- Green onion 30g
- Red chili pepper 5g
- Cheongyang chili pepper 5g
- Kimchi brine 1 cup (approx. 200ml)
- Water 2 cups (approx. 400ml)

- Minced garlic 1/2 Tbsp
- Cooking wine (Mirin, etc.) 1 Tbsp

Cooking Instructions
Step 1
First, it’s important to remove the blood from the pork ribs. Soak the pork ribs (650g) in plenty of water with 2-3 tablespoons of soju for about 30 minutes to drain the blood. This process removes any gamey smell and helps tenderize the meat.
Step 2
Peel the potatoes and cut them into half-moon shapes, about 2-3cm in size. Slice the green onion diagonally, and similarly slice the red and Cheongyang chili peppers diagonally. Cut the aged kimchi into bite-sized pieces. Rinse the drained pork ribs lightly under running water and pat them dry. Once all ingredients are prepped, you’re ready to cook!
Step 3
Now it’s time to combine the pork ribs and aged kimchi to create a delicious stew. Spread out a leaf of aged kimchi, place a piece or two of the drained pork ribs on it, and roll the kimchi tightly around the ribs. This prevents the ribs from coming out during cooking and ensures the flavors distribute evenly, making it even more delicious.
Step 4
Arrange the kimchi-rolled pork ribs snugly at the bottom of a pot. Add the prepared potatoes on top. Pour in 1 cup of kimchi brine and 2 cups of water. Cover the pot and bring to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer until the pork ribs and potatoes are thoroughly cooked, about 20-30 minutes. Slow simmering is key!
Step 5
When the ribs and potatoes are nearly cooked, lift the lid. At this stage, add 1/2 Tbsp minced garlic, 2 Tbsp anchovy extract, and 1 Tbsp cooking wine, and mix well. Adding the roughly chopped onion will also enhance the stew with sweetness and depth. Cover again and simmer for another 10 minutes to allow the flavors to meld.
Step 6
This is the final step! Add the sliced green onion, red chili pepper, and Cheongyang chili pepper, and let it simmer briefly. The spiciness of the peppers and the aroma of the green onion will elevate the flavor of the Kimchi stew. Once it simmers, turn off the heat and get ready to enjoy!
