Heart Zucchini Pancakes

  • 1 zucchini
  • 1 small can of Spam
  • Pancake mix (as needed)
  • 2 eggs (or to taste)
  • Heart-shaped cookie cutter (small size)

Cooking Instructions

First, wash the zucchini thoroughly and pat it dry. Slice it into rounds about 0.5 cm thick. Slice the Spam to a similar thickness as the zucchini. Cutting the ingredients to a similar thickness will ensure they have a lovely shape and cook evenly.

Place the heart-shaped cookie cutter on top of a slice of zucchini or Spam and press down firmly to cut out the heart shape. You can carefully cut around the shape with a knife or cut thin slices using the cutter. If the Spam is too thick, you can slice it in half after cutting the heart shape to achieve a more even thickness. This will help the shapes hold better when frying.

Prepare the shaped zucchini and Spam. Lightly and evenly coat one side of the zucchini slices with pancake mix. Then, whisk the eggs in a bowl to create an egg wash. Dip both sides of the pancake-mix-coated zucchini and Spam slices into the egg wash. The egg wash will help the coating adhere and give the pancakes a beautiful golden color when cooked.
