How to Make Delicious and Easy Soy-Marinated Eggs
I absolutely love soft-boiled eggs! That’s why I always enjoy my fried eggs sunny-side up, and my favorite convenience store convenience food is ‘Gamdongran’, a type of perfectly soft-boiled egg. Anyway, I previously made ‘Ajitama-go’ with soft-boiled eggs, and this time I tried making a simpler version, ‘Addictive Soy-Marinated Eggs’!
Main Ingredients- 5 eggs
- 7 stalks scallions
- 2 red chili peppers
Cooking Instructions
Step 1
Take the eggs out of the refrigerator about 1 hour before cooking to allow them to come to room temperature. This helps prevent the eggs from cracking when boiling.
Step 2
In a pot, add enough water to cover the eggs, 1 Tbsp of vinegar, and 1/2 Tbsp of salt, and bring to a boil. Vinegar and salt help prevent the egg white from leaking out if the shell cracks and make the shells easier to peel.
Step 3
Once the water is boiling vigorously, gently place the prepared eggs into the pot using a spoon or ladle, being careful not to let them hit the bottom. Reduce the heat to medium and boil for exactly 6 minutes and 30 seconds to achieve a perfect soft-boiled consistency.
Step 4
While the eggs are boiling, gently stir them in one direction with chopsticks or a spoon. This ensures the yolk stays in the center, creating a beautifully shaped soft-boiled egg.
Step 5
Immediately remove the boiled eggs and submerge them in ice water to cool them completely. The sudden temperature change causes the egg whites to contract, making the shells much easier to peel.
Step 6
While the eggs are cooling, prepare the vegetables for the soy marinade. Wash the red chili peppers, remove the seeds, cut them into quarters, and then finely mince them.

Trim the roots off the scallions, wash them, and then finely chop them. The sharp, fresh flavor of the scallions will enhance the overall taste of the marinated eggs.

Once the eggs are thoroughly cooled, carefully peel them. Eggs that have been in ice water will have a thinner membrane, making peeling easier.

In an airtight container, combine all the ingredients for the Addictive Soy Marinade. Add 1 cup soy sauce, 1/2 cup corn syrup, 1 cup vinegar, 1 cup water, minced red chili peppers, chopped scallions, 3 Tbsp sugar, 1 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds. (Note: The original recipe states ‘1 cup vinegar, 1 cup soy sauce, 1 cup water’ but the ingredient list shows ‘1 cup soy sauce, 3 Tbsp sugar, 1 cup vinegar, 1/2 cup corn syrup, 1/2 Tbsp salt, 1 Tbsp sesame oil, 1 Tbsp toasted sesame seeds’. Following the provided ingredient list, it should be ‘1 cup soy sauce, 1/2 cup corn syrup, 1 cup vinegar, 1/2 Tbsp salt, 1 Tbsp sesame oil, 1 Tbsp toasted sesame seeds’. Stir all the marinade ingredients in the container thoroughly with a spatula or spoon until the sugar is completely dissolved. Ensuring the marinade is evenly mixed is key for the eggs to absorb the flavors well.

Neatly arrange the peeled eggs in the airtight container filled with the soy marinade. To ensure the eggs are fully submerged and don’t float, gently press down on them with your hand before closing the lid. This helps them absorb the marinade more effectively.

Close the lid of the airtight container and refrigerate for at least 6 hours to marinate. The longer they marinate, the deeper the flavor will become, resulting in perfectly delicious Addictive Soy-Marinated Eggs. Marinating for about a day will yield an even richer flavor.
