Main Ingredients

  • 30 small eggs (quail eggs or fresh chicken eggs)
  • 1/2 medium onion
  • 1 stalk of green onion (scallion)
  • 1 Korean green chili pepper (optional)
  • 1 red chili pepper (for color)

Marinade Ingredients

  • 1/2 Tbsp minced garlic
  • 1/2 cup (100ml) water
  • 1/2 cup (100ml) soy sauce
  • 1/4 cup (50ml) cooking wine (mirin or cheongju)
  • 2 Tbsp corn syrup (or oligodang)
  • 1 Tbsp sugar
  • 1 Tbsp plum extract (maesilcheong)
  • 1 Tbsp sesame seeds (toasted)

Cooking Instructions

Place the quail eggs or fresh chicken eggs in a pot and cover them with water. Bring to a boil over high heat, then reduce to medium-low heat and simmer for about 7-10 minutes for perfectly soft-boiled eggs. (Immediately transferring the boiled eggs to an ice bath will make peeling easier.)

While the eggs are boiling, wash and peel the onion. Chop the green onion into suitable sizes, focusing on the white parts. Remove the stems from the green chili pepper and red chili pepper, wash them, and prepare them. (Use green chili for a spicy kick, and red chili for added color.)

Finely mince the prepared onion, green onion, green chili pepper, and red chili pepper. Using a mandoline slicer or a food processor can make this step quicker. Finely chopped vegetables integrate well into the marinade and provide a pleasant texture when eaten with the eggs.

In a large bowl, combine the soy sauce, water, cooking wine, corn syrup (or oligodang), sugar, plum extract, minced garlic, and the finely minced onion, green onion, and chili peppers. Sprinkle in the sesame seeds. Stir everything together well to create the marinade. You can let it sit for a bit to allow the flavors to meld.
