  • 10 Hard-boiled Eggs (soft-boiled or hard-boiled to your preference)
  • 4 Cheongyang Peppers (2 red, 2 green)
  • 1 Green Onion
  • 1/2 Onion

Cooking Instructions

Step 1

First, let’s prepare the eggs for our delicious marinated eggs. Boil 10 eggs to your desired doneness: about 7-8 minutes for soft-boiled or 10-12 minutes for hard-boiled. Once boiled, cool them in cold water and carefully peel off all the shells. Place the peeled eggs into a kimchi container or an airtight container.

Step 2

Now, let’s make the star of the dish: the addictive soy sauce marinade! In a pot, combine 100ml of soy sauce, 100ml of water, 1 Tbsp of raw sugar (or regular sugar if you don’t have it), and 3 Tbsp of mirin (or soju/cooking wine). Cover the pot and bring it to a boil over high heat.

Step 3

While the soy sauce is boiling, let’s prepare the vegetables that will add flavor and aroma to our marinated eggs. Finely chop 1 green onion. Remove the stems from 4 Cheongyang peppers (2 red, 2 green) and chop them finely. Finely dice 1/2 onion. If you like it spicier, feel free to increase the amount of Cheongyang peppers, or remove the seeds and reduce the quantity for a milder taste.

Step 4

Once the soy sauce mixture begins to boil, reduce the heat to medium. Add 1 Tbsp of minced garlic. Gently roll the eggs in the pot to ensure they are evenly coated with the soy sauce. You’ll notice the eggs gradually taking on a darker, richer color.

Step 5

After adding the minced garlic and letting it simmer for a moment, immediately add all the chopped green onion, Cheongyang peppers, and onion. Let it simmer until the vegetables soften slightly.

Step 6

Once the vegetables have softened a bit, turn off the heat right away! It’s important not to let the soy sauce reduce too much, as this will result in moist and flavorful marinated eggs.

Step 7

After turning off the heat, stir in 1 Tbsp of honey for added gloss and a subtle sweetness. Pour this flavorful soy sauce mixture over the peeled boiled eggs in the container. As the mixture cools, the soy sauce will deeply infuse into the eggs, making them even more delicious.

Step 8

Allow the marinated eggs to cool completely, then cover the container and store them in the refrigerator. Letting them marinate in the fridge for about a day will deepen the flavors even further. They are best enjoyed within 2 to 3 days. Try serving them over rice or as a topping for salads!
