Step 1

First, combine 2 ladles of pancake mix and 3 tablespoons of acorn flour in a large bowl. While a 1:5 ratio of acorn flour to pancake mix is good for a chewy texture, you can adjust it to your preference. It’s important to create a batter that isn’t too watery, aiming for a slightly thick consistency.

Step 2

Acorn flour tends to not bind well if the batter is too wet. Therefore, to ensure the ingredients stick together properly, mix the batter until it has some stickiness. Add a little water gradually if needed to achieve the desired consistency. Finally, add 1 tablespoon of minced garlic and mix thoroughly until all ingredients are well combined.

Step 3

Thinly julienne the prepared vegetables: onion, carrot, and zucchini. Add them to the batter. Slicing the vegetables thinly and uniformly will help them cook evenly within the pancake and prevent them from breaking apart.

Step 4

It’s important to briefly blanch the frozen seafood mix in boiling water. This step prevents the seafood from popping out while the pancake is cooking, resulting in a neater and more visually appealing pancake. Step 5
