Recently, my husband brought home some fresh abalone, and I made this creamy, delicious abalone porridge with it, which truly revived my appetite and spirit. This recipe is perfect as a special health-boosting meal for summer solstice days, and you can easily recreate this wonderful dish at home.

Ingredients

  • 4 cleaned fresh abalones
  • 100ml glutinous rice (approx. 1/2 cup)
  • 200ml regular rice (approx. 1 cup)
  • 1200ml water (approx. 6 cups)
  • A pinch of sesame seeds (for garnish)

  • Abalone guts (key ingredient for rich flavor)
  • A pinch of salt or seasoning salt (to taste)
  • 3 tablespoons sesame oil (for sautéing and flavor enhancement)

Cooking Instructions

Step 1

First, prepare the star of your abalone porridge: the abalone. For the cleaned abalone, you can either chop it coarsely according to your preference, or mince it finely for a smoother texture. Rinse the rice and drain any excess water.

Soaking the rice beforehand will result in a softer and more delicious porridge. Mix 200ml of regular rice with 100ml of glutinous rice in a 2:1 ratio and soak them in cold water for at least half a day. This amount of soaked rice will yield approximately 2 cups and will make about 3 generous servings of abalone porridge.

Now, let’s start cooking the porridge. Heat about 3 tablespoons of fragrant sesame oil in a pot over medium-low heat. Add the soaked rice and sauté it. Continue to stir-fry until the rice grains become translucent.

To prevent the rice from sticking to the bottom of the pot and to achieve a fluffy texture, add about 50ml of water gradually while stir-frying. It’s crucial to keep stirring to prevent the rice grains from clumping together.

Abalone guts are essential for that deep, savory flavor in abalone porridge! Don’t skip this ingredient. Rinse the guts thoroughly under running water. To eliminate any fishy odor and ensure a smooth consistency, blend the guts with 2-3 tablespoons of water in a blender until finely pureed. Straining the pureed guts through a fine-mesh sieve will result in an even cleaner taste.

Once the rice grains are nicely sautéed and fluffy, add the chopped abalone and stir-fry together for another 1-2 minutes. After mixing the abalone with the rice, pour in the 1200ml of water and the finely pureed abalone guts. Bring to a boil over high heat.

The final consistency of the porridge can vary depending on the type of rice used, but generally, using about 3 times the amount of water to rice is recommended. Start with 1200ml of water, and feel free to add a bit more as you cook if you prefer a thinner consistency.

Once the porridge comes to a boil, reduce the heat to medium-low, and let it simmer gently, partially covered, for about 20-30 minutes, or until the rice grains are very soft and have broken down. Remember to stir occasionally to prevent sticking. Near the end of cooking, season with salt to your taste. Finally, sprinkle with toasted sesame seeds for a beautiful garnish and a delicious finish to your abalone porridge!
