How to Make Abalone Innards Fried Rice – One-Bowl Meal, Abalone Liver, Oyster Sauce Fried Rice, Sea Urchin Roe Sauce
There’s nothing to waste from abalone, and the innards make up half of it! That’s why today, I’m making fried rice with abalone innards.
Ingredients- Abalone innards (from 5 abalones)
- 1 Korean green chili pepper
- Scallions, a small amount
- 1 tsp minced garlic
- 1 egg
- 1 bowl cooked rice (1 instant rice pack)
- A pinch of black pepper
Cooking Instructions
Step 1
Thoroughly scrub the outside of the abalone shells with a brush to remove any dirt or debris. Ensuring they are clean is key.
Step 2
Carefully separate the abalone meat from its innards (the green or dark part). The innards are crucial for the rich flavor of this fried rice.
Step 3
Finely mince the separated abalone innards with a knife. Mincing them finely helps to create a pleasing texture and allows the seasonings to penetrate well.
Step 4
If mincing by hand is difficult, you can also use a blender or food processor to achieve a fine consistency. This method is recommended if you prefer a smoother texture for your fried rice.

Heat a generous amount of cooking oil in a pan over medium-low heat. Add the chopped scallions and minced garlic, and sauté until fragrant. It’s important to cook them thoroughly so their aromas infuse into the oil.

Once the scallions and garlic are fragrant, add the finely chopped Korean green chili pepper and stir-fry together. Feel free to adjust the amount of chili pepper based on your preference for spiciness.

Now, add the prepared abalone innards to the pan and stir-fry actively. To eliminate any fishy smell and enhance the flavor, it’s best to cook over medium-high heat quickly.

Once the abalone innards are somewhat cooked, add 1 tablespoon of mirin and 1 tablespoon of oyster sauce. Stir-fry until all ingredients are well combined. Oyster sauce is a magical ingredient that adds wonderful umami!

If you notice any lingering fishy smell from the abalone during cooking, add a pinch of black pepper. Pepper helps to mask unwanted odors and enhances the overall flavor profile.

Add 1 bowl of warm cooked rice (from 1 instant rice pack) to the stir-fried innard mixture. Stir and fry evenly to combine. Finally, drizzle in 1 tablespoon of sesame oil for a nutty aroma to complete the dish.
