The new year has dawned! On this first day, we made Baek Jong-won’s Tteokguk recipe with the kids. This is our first meal of the year, prepared together. This recipe is surprisingly simple and incredibly delicious, perfect for celebrating the start of 2020 with loved ones.

  • Tteokguk rice cakes for 2 servings
  • 1 large egg
  • 150g beef (for soup)
  • 1/2 stalk green onion
  • 2 Tbsp soy sauce
  • 1 Tbsp fish sauce
  • 2 Tbsp sesame oil
  • 2 Tbsp cooking oil
  • 1 Tbsp minced garlic
  • A pinch of black pepper

Cooking Instructions

1. Preparing the Egg Garnish (Gyeran Jidan): First, crack 2 eggs into a bowl. Add 2 tablespoons of water and whisk everything together until well combined. Adding a little water helps the eggs blend smoothly, making them easier to cook into a thin omelet.

Heat a frying pan over medium-high heat and lightly coat with cooking oil. Pour in the egg mixture and cook until golden brown on both sides. * Tip: Cooking the egg garnish over high heat for a short time might result in a less-than-perfect shape, but it actually enhances the flavor when added to the tteokguk, making it taste even better!

2. Cooking the Tteokguk: Slice the beef into bite-sized pieces suitable for soup. Lightly rinse the tteokguk rice cakes under running water to remove any dust, then drain them well. * Tip: Tteokguk rice cakes for 2 servings typically measure about 2 rice bowls full.

In a pot, combine 2 tablespoons of sesame oil and 2 tablespoons of cooking oil. Add the sliced beef and stir-fry over medium-high heat. * Tip: Using both sesame oil and cooking oil together deepens the nutty aroma of the sesame oil and helps prevent the beef from burning, resulting in a tastier stir-fry.

Once the beef is no longer pink, add 2 tablespoons of soy sauce and about half a cup (approx. 100ml) of water. Stir-fry everything together. * Tip: Adding a small amount of water and seasoning the beef with soy sauce while stir-frying allows the flavor to penetrate the meat. This ensures the beef is seasoned even after adding more broth later, providing a savory taste with every bite.

After the beef has absorbed the seasoning, pour in 4 cups (approx. 800ml) of water to create the broth. Bring the soup to a rolling boil.

Once the broth is boiling, add the drained tteokguk rice cakes, 1 tablespoon of minced garlic, and 1 tablespoon of fish sauce. Continue to simmer. * Tip: Add the fish sauce before the soup comes to a full boil. This allows the fishy aroma to dissipate while infusing the broth with a rich umami flavor, leaving only the delicious savory notes.

When the rice cakes are soft and cooked through, pour in the lightly beaten egg (1 egg) and add the chopped green onion and a pinch of black pepper. Let it simmer for another moment.
