Main Ingredients- 1 whole Flatfish (cleaned and portioned)
Flavorful Braising Sauce- 4 Tbsp Soy Sauce (or 3 Tbsp Korean soup soy sauce)
- 2 Tbsp Gochugaru (Korean chili flakes; add 1 Tbsp more for spicier taste)
- 1 Tbsp Oligodang (Korean corn syrup, for shine and sweetness)
- 1 Tbsp Minced Green Onion (white parts preferred)
- 1 Tbsp Minced Garlic (essential for aroma)
- 1 Tbsp Sesame Oil (enhances nutty flavor)
- 1 tsp Sugar (adjust sweetness)
- 1 tsp Toasted Sesame Seeds (for garnish and nutty taste)
- 2/3 cup Water (approx. 120ml, base for the braising liquid)

Cooking Instructions
Step 1
Gently rinse the flatfish under running water, then cut it into bite-sized pieces (about 3-4 cm). If using pre-portioned fish, this step is even quicker. Lightly pat the fish dry.

The secret to delicious braised dishes: make the sauce! In a bowl, combine the soy sauce (or Korean soup soy sauce), gochugaru, oligodang, minced green onion, minced garlic, sugar, sesame oil, and toasted sesame seeds. Pour in the 2/3 cup of water. Stir with a spoon or whisk until all ingredients are well combined to create the braising sauce. If you prefer a more intense flavor, you can add a little more soy sauce.
Step 3
Now, arrange the prepared flatfish pieces in a pot. Pour the prepared braising sauce evenly over the fish. Spooning some sauce over the fish helps it absorb the flavors better. Cover the pot and place it over medium heat to start cooking.
Step 4
Once the pot begins to boil, reduce the heat to medium-low. From this point on, be careful to prevent the sauce from burning. Spoon the sauce over the fish periodically as it simmers down to a rich, concentrated glaze. Flipping the fish occasionally ensures the flavors penetrate evenly. When the sauce has mostly reduced and the fish is glossy, turn off the heat. Your delicious braised flatfish is ready! Serve it over warm rice for a delightful meal.
