3-Tier Cheesy & Chewy Okonomiyaki Recipe
Special Okonomiyaki Featuring 9 Layers of Cheese and a Delightful Chewy Texture
This recipe creates an extraordinary Okonomiyaki with a total of 9 layers of cheese, achieved by stacking 3-layer cheese slices three times. While regular Okonomiyaki is delicious, the inclusion of cheese cubes and chewy mochi in between elevates it to a whole new level of flavor and texture. Perfect for special occasions or when you crave a unique culinary experience!
Main Ingredients- 3 slices of 3-layer cheese (e.g., cream cheese or cheddar slices)
- 20 shrimp (medium size)
- 1/4 head of cabbage
- 1/2 onion
- A small bunch of green onions or scallions (about 2 Tbsp)
- 3 Kirimochi pieces (optional)
- 5 cups all-purpose flour
- 1 cup cornstarch
- 3 Tbsp dried shrimp
- 1 egg
- 1.5 cups water

Cooking Instructions
Step 1
First, prepare the vegetables. Shred the cabbage thinly (about 0.5 cm thick) and finely mince the onion. Chop the green onions or scallions.
Step 2
Rinse the dried shrimp, pat them dry, and then grind them into a powder using a blender or food processor. You should have about 3 tablespoons of shrimp powder.
Step 3
Peel and devein the fresh shrimp. Cut them into bite-sized pieces (about 1-2 cm).

Prepare the 3-layer cheese. Stack three slices of cheese (cream cheese or cheddar slices) and cut them into approximately 1.5 cm cubes. Stacking them creates a richer cheese flavor.
Step 5
Cut the Kirimochi (Japanese rice cakes) into cubes similar in size to the cheese cubes (about 1.5 cm). If Kirimochi is unavailable, you can omit this step, or use regular Korean rice cakes (garaetteok) as a substitute for a similar chewy texture.

In a large bowl, combine the all-purpose flour (5 cups), cornstarch (1 cup), and the ground dried shrimp powder. Crack in the egg and pour in the water (1.5 cups). Whisk or stir with a spatula until smooth and free of lumps to create the batter. Adjust the consistency if needed; it shouldn’t be too watery.
Step 7
Add all the prepared ingredients to the batter: the shredded cabbage, minced onion, chopped green onions, cut shrimp, Kirimochi cubes, and cheese cubes. Mix well until all ingredients are evenly coated with the batter.
Step 8
Heat a generous amount of cooking oil in a frying pan over low heat. Pour a ladleful of the batter onto the pan and cook for about 5 minutes per side, for a total of 10 minutes on low heat. Ensure the inside is cooked through and the outside is golden brown. The cheese will melt and make it even more delicious.
Step 9
Transfer the cooked Okonomiyaki to a plate. Drizzle with Tonkatsu sauce in a zigzag pattern and generously dollop with mayonnaise, according to your preference.
Step 10
Finally, sprinkle Katsuobushi (bonito flakes) on top for the finishing touch. Your special Okonomiyaki, with its 9 layers of cheese and wonderfully chewy texture, is now ready! Enjoy your delicious meal!
