Forget the lengthy process of making broth – with this simple trick, you can whip up a deeply flavorful and refreshing crab stew in just 15 minutes! Crab Stew Ingredients- 3 fresh crabs
- 3 shrimp (optional)
- 1/2 onion (sliced)
- 1 stalk green onion (cut diagonally)
- 2 green chili peppers (sliced diagonally)
- 2 red chili peppers (sliced diagonally)
- 100g radish (sliced thinly)
- 1/3 small pumpkin (sliced thinly)
- 800ml water
Flavorful Seasoning- 2 Tbsp Doenjang (Korean soybean paste)
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp minced garlic
- 2 Tbsp Doenjang (Korean soybean paste)
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp minced garlic
Cooking Instructions
Step 1
First, rinse the crabs under running water to remove any debris. Then, soak them in water with 3 tablespoons of vinegar for about 10 minutes. This helps to remove any gamey odors and impurities.
Step 2
After soaking, use a toothbrush or a clean scrubbing brush to thoroughly clean the crabs, paying attention to the crevices of their shells. This ensures they are spotless.
Step 3
You can prepare the crabs whole, or for a cleaner taste, separate the top shell and carefully remove the internal organs and gills. (The tomalley can add richness to the broth, so you can choose to keep it or remove it based on your preference.)
Step 4
Now, in a pot, add 800ml of water and the thinly sliced radish. The radish will form the base of the broth, giving it a refreshing depth of flavor.
Step 5
Once the water comes to a rolling boil, add the prepared crabs and shrimp. Let them simmer for about 5 minutes, then carefully skim off any foam or impurities that rise to the surface to ensure a clear broth.
Step 6
Add the seasoning mixture (2 Tbsp doenjang, 1 Tbsp gochujang, 1 Tbsp minced garlic), along with the thinly sliced pumpkin and the prepared vegetables (onion, green onion, chili peppers). Simmer for another 5 minutes. The pumpkin will add a subtle sweetness and a creamy texture as it cooks. Allow the flavors to meld together for about 5 more minutes.
