This is the very bibim guksu recipe that took the internet by storm after being featured on tvN’s ‘Kang’s Kitchen Season 2’! We’ve adapted Chef Baek Jong-won’s iconic recipe for easy home cooking. Experience the perfect balance of sweet and savory that makes this dish irresistible!
Key Ingredients- 300g Ground pork (or thinly sliced pork belly)
- 1 cup Minced onion (measured with a paper cup)
- 2 stalks Green onions
- 1 cup Water
- 1/2 Pear (or 1 cup of pre-juiced pear beverage)
- Pickled radish (julienned)
- Seaweed flakes (for garnish)
- Noodles (Somen or medium noodles, as preferred)
- Sesame oil
- Whole sesame seeds (or ground sesame seeds)

- 1/2 cup Sugar
- 1/2 cup Corn syrup (or rice syrup)
- 1.5 cups Soy sauce
- 1/3 cup Minced garlic
- 1 tsp Grated ginger
- 1.5 cups Gochugaru (Korean chili flakes, adjust to spice preference)
- Ground black pepper

Cooking Instructions
Step 1
First, prepare one onion and mince it finely. Aim for about 1 cup when measured with a paper cup. The onion’s sweetness and flavor will add depth to the sauce.
Step 2
Wash the two green onions thoroughly and finely chop them, using both the white and green parts. They can be used as a garnish or added while cooking the sauce to enhance its aroma.
Step 3
In a deep pan or pot, add the 300g of ground pork and 1 cup of water. Break up the meat with a spatula or wooden spoon and stir constantly while cooking to prevent clumping. This method ensures the pork cooks evenly and stays fluffy.
Step 4
Once the pork is no longer pink and has started to cook, add the minced onion and chopped green onions. Simmer over medium-low heat until the ingredients are tender and fragrant, stirring occasionally to prevent sticking. This slow simmering process develops a rich flavor.
Step 5
Now, let’s make the base for the bibim guksu sauce. Combine 1 cup of mirin, 1/2 cup of sugar, 1/2 cup of corn syrup, and 1.5 cups of soy sauce in the pan. Bring to a boil over high heat. Once it starts to foam vigorously, reduce the heat and simmer for another 2-3 minutes. Let the sauce cool completely before proceeding. It’s important to let it cool to avoid a strong alcohol scent.
Step 6
Add ingredients that will bring umami and a smooth texture to the sauce. Incorporate the pureed pear from half a pear (or 1 cup of pre-juiced pear beverage), along with 1/3 cup of minced garlic and 1 teaspoon of grated ginger. Adjust the amount of ginger to your preference, as it has a strong flavor.
Step 7
It’s time to add the gochugaru for color and spiciness. Start by adding 1 cup of gochugaru and mix it well into the sauce. Then, gradually add more gochugaru, a little at a time, until you achieve your desired sauce consistency and level of spiciness. You’re aiming for a slightly thick sauce.
Step 8
Finally, add a generous amount of ground black pepper and stir everything together. This completes the ‘Kang’s Kitchen Baek Jong-won Bibim Guksu’ sauce! Taste the sauce and adjust seasoning with more soy sauce or sugar if needed.
Step 9
Cook the noodles according to the package instructions, then rinse them under cold water and drain well. Place the cooked noodles in a serving bowl. Generously spoon the prepared bibim guksu sauce over the noodles. Top with julienned pickled radish, chopped green onions, and a sprinkle of seaweed flakes for garnish.
