We bought some fresh crown daisies (eolgal-i) and made a delicious salad seasoned with soybean paste. This side dish is incredibly addictive and a perfect match for rice!
Main Ingredients- 5 bunches of Crown Daisy (Eolgal-i), trimmed
Seasoning Ingredients- 1 Tbsp Soybean Paste (Doenjang)
- 1 Tbsp Tuna Extract (or Soy Sauce for Soup)
- 0.5 Tbsp Cooking Syrup (or Corn Syrup)
- 1/2 tsp MSG (Monosodium Glutamate) (optional)
- 1 Tbsp Perilla Oil (Deulkireum)
- 1 tsp Toasted Sesame Seeds
- 0.5 Tbsp Red Pepper Flakes (Gochugaru) (adjust to taste)
- 1 Tbsp Minced Garlic
- 1 Tbsp Soybean Paste (Doenjang)
- 1 Tbsp Tuna Extract (or Soy Sauce for Soup)
- 0.5 Tbsp Cooking Syrup (or Corn Syrup)
- 1/2 tsp MSG (Monosodium Glutamate) (optional)
- 1 Tbsp Perilla Oil (Deulkireum)
- 1 tsp Toasted Sesame Seeds

Cooking Instructions
Step 1
First, trim off any yellow or wilted outer leaves from the crown daisy. Also, clean up the base of the stems. Rinse the greens thoroughly multiple times under running water to remove any dirt or debris. This step is crucial for cleanliness.
Step 2
Bring a pot of water to a rolling boil and add 1 tablespoon of salt. Once boiling, carefully add the trimmed crown daisy and blanch for just 1 minute. Be careful not to overcook, as it will become mushy and lose its crispiness!
Step 3
Immediately after blanching, transfer the crown daisy to a bowl of cold water. This ‘cold shower’ helps to preserve the vibrant green color and maintain a crisp texture.

Once cooled, gently squeeze out as much water as possible from the crown daisy. Excess water can dilute the seasoning, so removing moisture thoroughly is key to a flavorful dish.

After squeezing, cut the crown daisy into bite-sized pieces. Cutting them into about 2-3 cm lengths will ensure the seasoning is evenly distributed and make them easier to eat.

Place the cut crown daisy in a mixing bowl. Add all the seasoning ingredients: 1 Tbsp soybean paste, 1 Tbsp tuna extract, 0.5 Tbsp gochugaru, 1 Tbsp minced garlic, 1/2 tsp MSG (if using), and 1 Tbsp perilla oil. Gently toss and mix the ingredients with your hands until everything is well combined. Be gentle to avoid bruising the stems.
