Main Ingredients- 1/2 Onion (thinly sliced)
- 1 bag Enoki mushrooms (trimmed, separated into bite-sized pieces)
- 200g Sliced beef for bulgogi (cut into bite-sized pieces)
- 2 bowls Warm cooked rice
- 2 Tbsp Green onions (finely chopped)
- 2 Egg yolks
Seasoning- 4 Tbsp Soy sauce base (Tsuyu)
- Pinch of Black pepper
- 4 Tbsp Soy sauce base (Tsuyu)
- Pinch of Black pepper
Cooking Instructions
Step 1
First, let’s prepare the vegetables. Peel the onion, wash it thoroughly under running water, and slice it thinly. Trim the root end of the enoki mushrooms, rinse them lightly, and separate them into bite-sized pieces. Then, cut them in half again lengthwise for better sauce absorption and cooking.

Step 2
Time to marinate the beef. Pat the bulgogi beef dry with paper towels to remove excess blood. Cut it into bite-sized pieces, about 2-3 cm, suitable for everyone to eat. In a bowl, combine the beef with 4 tablespoons of soy sauce base (Tsuyu) and a pinch of black pepper. Gently mix with your hands to marinate. Let it sit for about 5 minutes to allow the savory flavor of the soy sauce base to penetrate the beef.

Step 3
Now, let’s heat up the pan and stir-fry. Heat a pan over medium heat and add a little cooking oil. Add the marinated beef and the sliced onions to the pan and stir-fry. Use chopsticks or a spatula to break apart the beef as it cooks to ensure even cooking. Stir-fry until the onions become translucent.

Step 4
Once the onions are halfway cooked, add the enoki mushrooms and continue to stir-fry. Enoki mushrooms cook quickly, so you don’t need to cook them for too long. Stir-fry for just another 1-2 minutes until the beef, onions, and mushrooms are all tender. Your delicious donburi topping is now ready.

Step 5
Finally, let’s assemble the donburi. Generously spoon the deliciously stir-fried beef and vegetables over the warm cooked rice. Gently place an egg yolk in the center for added richness and a creamy texture. Sprinkle with the finely chopped green onions for a fresh garnish. Your super simple beef donburi with soy sauce base is complete! For an even more delicious experience, break the egg yolk and mix it with the rice and toppings.
