Quick & Easy Microwave Tuna Kimchi Fried Rice with Cheese

A simple and delicious tuna kimchi fried rice enhanced with melted cheese. This recipe is perfect for a quick meal when you’re short on time, using just a microwave. Enjoy a satisfying dish with minimal effort!
Main Ingredients- 1 ladleful of well-fermented kimchi (about 1/2 cup, kimchi chopped)
- 1 small can of tuna (approx. 70-80g, drained)
- 1 bowl of cooked rice (about 210g, preferably warm)
- Shredded cheese (mozzarella) as needed
Seasonings & Others- 1 Tbsp sugar
- 1 Tbsp perilla oil (or sesame oil)
- 1/2 tsp gochujang (Korean chili paste), adjust to taste

Cooking Instructions
Step 1
Get a microwave-safe, wide plate ready.

Add about one ladleful of well-fermented kimchi to the plate. Adjust the amount of kimchi according to your rice portion.

Using scissors or a knife, finely chop the kimchi into bite-sized pieces (about 1cm). This helps distribute the seasonings evenly and improves the texture.

Add 1 tablespoon of sugar to balance the acidity of the kimchi and enhance its savory flavor.

Add 1 tablespoon of perilla oil for a nutty aroma. (You can also add a little sesame oil if you like.) Use a spatula or spoon to mix the kimchi, sugar, and perilla oil thoroughly, ensuring the seasonings are well combined.

Add the drained tuna from the small can. Place the bowl of cooked rice on top of the kimchi and tuna mixture. Mix the tuna and rice together. Then, microwave for about 30 seconds to warm the rice and ingredients.

After microwaving, use a spatula to thoroughly mix the rice and ingredients. Break up any clumps of rice and ensure the kimchi seasoning and tuna are well incorporated. (Note: If using pre-cooked rice like ‘Hetbahn’, you can add it directly without pre-heating.)

Add 1/2 teaspoon of gochujang (Korean chili paste) to the mixed rice, adjusting to your preference, and mix again until everything is well combined. Gochujang adds a pleasant spicy kick. At this point, you have a basic tuna kimchi fried rice.

Sprinkle a generous amount of shredded cheese over the fried rice. Don’t be shy with the cheese! Place the plate back in the microwave and cook for about 1 to 1.5 minutes, or until the cheese is completely melted and bubbly. (Keep an eye on it to prevent burning.)
