Main Ingredients

  • 200g rolled beef (thinly sliced cut)
  • 1/4 head of well-fermented kimchi (chopped into bite-sized pieces)
  • 500ml anchovy-kelp broth or water
  • 1 enoki mushroom (trim the base and separate the strands)
  • 1 handful of green onions (chopped)

Seasoning

  • 1 Tbsp soy sauce (guk-ganjang or jin-ganjang)
  • 1 Tbsp sugar (balances the sourness of the kimchi)

Cooking Instructions

Step 1

First, heat a wide and deep wok or pot over medium heat. Add the rolled beef and stir-fry. You don’t need to add oil, as the beef will release its own fat. Sauté until the surface of the beef is golden brown.

When the beef is about 50% cooked, add the pre-chopped kimchi and stir-fry together. Cook for about 2-3 minutes until the kimchi softens and releases a delicious aroma, mingling with the beef fat.

Once the kimchi and beef are well stir-fried and combined, pour in 500ml of anchovy-kelp broth or water. Bring to a boil over high heat, then reduce to medium heat and simmer for 5 minutes. After that, lower the heat to low and let it simmer gently for 10 minutes. This process develops the deep flavor of the kimchi stew.

After simmering for 10 minutes, add the prepared enoki mushrooms and chopped green onions to the kimchi stew. Finally, bring it back to a boil over high heat for about 1 minute. This will allow all the ingredients’ flavors to meld together, completing the delicious kimchi stew.
