The King of Kimchi Stews! Flavorful Rolled Beef Kimchi Stew

A special beef kimchi stew made for my wife who loves beef! Packed with rich flavor, this is a true rice thief.
Main Ingredients- 200g rolled beef (thinly sliced cut)
- 1/4 head of well-fermented kimchi (chopped into bite-sized pieces)
- 500ml anchovy-kelp broth or water
- 1 enoki mushroom (trim the base and separate the strands)
- 1 handful of green onions (chopped)
Seasoning- 1 Tbsp soy sauce (guk-ganjang or jin-ganjang)
- 1 Tbsp sugar (balances the sourness of the kimchi)

Cooking Instructions
Step 1
First, heat a wide and deep wok or pot over medium heat. Add the rolled beef and stir-fry. You don’t need to add oil, as the beef will release its own fat. Sauté until the surface of the beef is golden brown.

Step 2
When the beef is about 50% cooked, add the pre-chopped kimchi and stir-fry together. Cook for about 2-3 minutes until the kimchi softens and releases a delicious aroma, mingling with the beef fat.

Step 3
Once the kimchi and beef are well stir-fried and combined, pour in 500ml of anchovy-kelp broth or water. Bring to a boil over high heat, then reduce to medium heat and simmer for 5 minutes. After that, lower the heat to low and let it simmer gently for 10 minutes. This process develops the deep flavor of the kimchi stew.

Step 4
After simmering for 10 minutes, add the prepared enoki mushrooms and chopped green onions to the kimchi stew. Finally, bring it back to a boil over high heat for about 1 minute. This will allow all the ingredients’ flavors to meld together, completing the delicious kimchi stew.
