A special recipe passed down from my mother! You can make crispy and delicious enoki mushroom pancakes without any pre-made batter mix or flour. They are perfect as a healthy snack for dieting or as a simple meal alternative. The chewy texture of enoki mushrooms combined with spicy chili peppers and fragrant green onions creates a flavor everyone will love.

Main Ingredients

  • 2 packs Enoki mushrooms
  • 3 Cheongyang peppers (or similar spicy chili peppers)
  • 1/2 Green onion stalk
  • 2 Eggs

Seasoning

  • 1 Tbsp Salt
  • A pinch of Black pepper

Cooking Instructions

Step 1

First, trim the very bottom, slightly tough part of the enoki mushrooms. Then, chop them into bite-sized pieces, about 1-2 cm in length. Avoid chopping them too finely, as this can reduce the enjoyable chewy texture. Aim for a moderate thickness.

Step 2

Finely mince the Cheongyang peppers. If you enjoy a spicier kick, you can leave the seeds in. Also, finely chop the green onion, including both the white and green parts. It’s important to mince all the ingredients evenly so they blend well together in the pancake.

Step 3

In a large bowl, combine the chopped enoki mushrooms, minced Cheongyang peppers, and minced green onion. Crack in the 2 eggs, add the 1 tablespoon of salt and a pinch of black pepper for seasoning. Mix everything thoroughly with chopsticks or a spatula until all ingredients are evenly distributed.

Step 4

Heat a frying pan over medium heat and add a generous amount of cooking oil. Scoop about a tablespoon of the mixture at a time and drop it into the hot pan. Use the back of the spoon to gently press down the center, forming a round shape. Cook until one side is golden brown and crispy, then flip and cook the other side until equally golden and crisp. Once both sides are beautifully browned and crispy, your delicious enoki mushroom pancakes are ready!
