I decided to make some using the leftover avocado and tomato in my fridge. Avocado guacamole is a quintessential Mexican dish, made by finely chopping ripe avocado, fresh tomatoes, and onions, then mixing them with lemon juice, salt, and pepper. It’s fantastic served on bread or nachos, offering both amazing flavor and health benefits.   • 1/2 fresh tomato
  • 1/4 onion (mildened)
  • 2/3 Tbsp extra virgin olive oil
