Main Ingredients- 3 Tortillas
- 1 block (250g) Firm Tofu
- 1 cup Kimchi (well-fermented, with a little juice)
- 1/2 Onion
Cooking Instructions
Step 1
Cut the tofu into bite-sized pieces and drain excess water thoroughly. If you’re short on time, pat it dry with paper towels to remove as much moisture as possible. Place the prepared tofu under a press or a heavy object for about 10 minutes to firm it up. This helps maintain its shape and prevents it from breaking apart.
Step 2
Finely chop the well-fermented kimchi into small pieces, about 0.5cm, making it easy for everyone to eat. If the kimchi is too sour, you can add a little sugar to balance the flavor.
Step 3
Dice the onion into small cubes, similar in size to the chopped kimchi (about 0.5cm). In a bowl, combine the pressed tofu, chopped kimchi, and diced onion. Add 2 Tbsp of gochugaru and 2 Tbsp of potato starch. Mix everything gently with your hands until well combined and coated with the seasoning. The starch will help bind the ingredients and give them a nice gloss when cooked.
Step 4
Heat a sufficient amount of vegetable oil in a pan over medium heat. Add the seasoned tofu and kimchi mixture and stir-fry for about 5-7 minutes, until the tofu is lightly browned and the kimchi remains slightly crisp. Be careful not to overcook, as the kimchi can become mushy.
Step 5
Lightly toast the tortillas on a dry pan or skillet, one at a time, until they are warm and slightly pliable. This enhances their chewy texture and aroma. Toast for about a minute on each side over low heat; overcooking can make them brittle.
Step 6
Place a generous portion of the kimchi stir-fry in the center of each warm tortilla. Fold in the sides of the tortilla to create a wrap, ensuring the filling stays inside. Enjoy your delicious Kimchi Tortilla Wraps immediately!
