Sweet Rice Cake Bingsu
Transform your summer with this dramatic ‘Tteok Bingsu’ recipe!
This time, we’re bringing you the perfect treat for the hot summer days! Here’s a recipe for delicious Tteok Bingsu, boasting an exquisite sweet flavor.
Bingsu Ingredients- Sweet red bean paste
- Frozen milk
- Sweetened condensed milk
- Fresh fruits (seasonal)
- Crunchy nuts
- Chewy bingsu rice cakes
Cooking Instructions
Step 1
First, let’s prepare the ‘frozen milk,’ which is the foundation of our Tteok Bingsu. While plain shaved ice can taste bland, using frozen milk creates a wonderfully creamy and delicious bingsu with a rich, nutty flavor. Use a blender or bingsu machine to finely shave the frozen milk.
Step 2
Next, gently spoon the sweet red bean paste over the shaved frozen milk. The sweetness of the red bean paste will blend beautifully with the creamy milk, creating a fantastic taste. Then, drizzle sweetened condensed milk generously over the top to add even more sweetness.
Step 3
Now, add the delightful chewy rice cakes that are essential for Tteok Bingsu. These cakes provide a wonderful textural contrast to the soft, icy bingsu and are a key component of its charm. Add your desired amount.
Step 4
Finally, let’s garnish with fresh fruits and crunchy nuts to complete the masterpiece. I’ve used watermelon, canned peaches, and Korean melon for the fruits, and peanuts and finely crushed almonds for the nuts. Feel free to use any fruits or nuts you prefer – strawberries, mangoes, kiwi, walnuts, or sunflower seeds – to create your personalized, delicious Tteok Bingsu!
