Make 3 Kid-Friendly Brunch Menus with Spam Stir-fry: Bread Pizza, Tortilla Pizza, Egg Fried Rice
We’ve created three delicious brunch menus for kids using a flavorful stir-fry packed with Spam, bacon, and corn. They’re guaranteed to be a hit!
Spam Stir-fry Ingredients- Spam 200g (diced into 1cm cubes)
- Bacon 110g (chopped into 1cm pieces)
- Canned Corn 200g (drained and rinsed)
- Onion 1 medium (finely chopped)
- Scallion 1/2 (chopped)
- Mushrooms (optional, diced into 1cm cubes)
Pizza & Fried Rice Ingredients- Cheddar Cheese Slices 5
- Mozzarella Cheese 100g (adjust to taste)
- Eggs 4
- Bread Slices 2
- Tortilla 1 (approx. 20cm diameter)
- Cooked Rice 2 bowls (day-old rice recommended)
- Bell Pepper (various colors, thinly sliced)
- Black Olives (sliced)
- Cheddar Cheese Slices 5
- Mozzarella Cheese 100g (adjust to taste)
- Eggs 4
- Bread Slices 2
- Tortilla 1 (approx. 20cm diameter)
- Cooked Rice 2 bowls (day-old rice recommended)
- Bell Pepper (various colors, thinly sliced)
- Black Olives (sliced)
Cooking Instructions
Step 1
First, let’s prepare the main ingredients for the crowd-pleasing Spam stir-fry. Adding mushrooms will enhance the flavor and texture!
Step 2
Drain and rinse the canned corn under running water to remove excess liquid. Finely chop the onion. Dice the Spam and bacon into roughly 1cm cubes.
Step 3
Heat a non-stick frying pan over medium heat. Add the diced Spam, bacon, and 1 tablespoon of minced garlic. Stir-fry for about 1 minute until the Spam and bacon start to release their fat. Add 1 tablespoon of sugar and continue to cook until they turn golden brown. Then, add the chopped onion and sauté until it becomes translucent.
Step 4
Reduce the heat slightly, then add 2 tablespoons of oyster sauce and 1 tablespoon of ketchup. Stir quickly to combine. Add the drained corn and stir-fry briefly until everything is well mixed. Your delicious Spam stir-fry is ready! This stir-fry is great on its own, but today we’ll use it to create three wonderful brunch dishes for the kids.
Step 5
Now, let’s make our first dish: the super easy Bread Pizza. Heat a non-stick pan over low heat and melt 1/2 tablespoon of butter. Place the 2 slices of bread in the pan and toast one side until golden brown and slightly crisp. Then, turn off the heat.
Step 6
Flip the bread slices so the toasted side is facing up. Layer the cheddar cheese slices evenly over the bread. Spoon a generous amount of the prepared Spam stir-fry on top of the cheese. Finish by sprinkling mozzarella cheese generously. Cover the pan with a lid and cook over low heat until the cheese is completely melted and bubbly.
Step 7
Sprinkle some parsley flakes over the melted cheese for a beautiful finish. This bread pizza is perfect served with a warm latte or milk for the kids. Toasting the bread until it’s golden and crisp is key to its deliciousness!

Next up, our second dish: Tortilla Pizza! Gently heat a non-stick pan over medium-low heat and melt 1/2 tablespoon of butter, then turn off the heat. Place 1 tortilla (about 20cm in diameter) in the pan. Layer 3 cheddar cheese slices on top. Spread a good amount of the Spam stir-fry evenly over the cheese.
Step 9
Now, sprinkle a generous amount of mozzarella cheese! Lots of cheese makes for a wonderfully stretchy and savory pizza.
Step 10
Arrange the sliced bell peppers and black olives on top for a colorful garnish. Cover the pan with a lid and cook over low heat until the cheese is melted. In about 2 minutes, the edges of the tortilla will turn golden brown and become nice and crispy.
Step 11
This golden-brown tortilla pizza is wonderfully crispy on the outside and chewy on the inside. The combination of the savory Spam stir-fry and melted cheese is absolutely divine. Kids will adore this taste, so be sure to try it!

Finally, for our third dish, a hearty and delicious Egg Fried Rice. Heat a non-stick pan over medium-low heat and melt 1 tablespoon of butter. Add the chopped scallion and 1 tablespoon of minced garlic, and sauté for about 1 minute until fragrant. Add the Spam stir-fry and mix it in quickly.
Step 13
Push the stir-fried ingredients to one side of the pan. Crack the 4 eggs into the empty space and scramble them. Once the scrambled eggs are mostly cooked, push them to the side as well. Pour 1 tablespoon of oyster sauce along the edge of the pan and let it bubble. Once it boils, mix everything together. Mix well to incorporate the flavors, then turn off the heat immediately.

Add 2 bowls of cooked rice (preferably day-old) to the pan. Use a spatula to break up any clumps and mix thoroughly. Stir-fry over medium heat for about 2 minutes, ensuring the rice is evenly heated. Turn off the heat, sprinkle with a pinch of black pepper, and give it a final quick stir. Your delicious Egg Fried Rice is ready!

Serve the Egg Fried Rice on a plate and garnish it attractively with a wreath salad for a visually appealing and delicious meal. This dish is a favorite among children for both its appearance and taste, so give it a try!
