Beat the heat with this refreshing Kimchi Acorn Jelly Bowl! Utilizing chilled cold noodle broth, this dish features a delightful mix of icy broth, chewy acorn jelly, and crisp kimchi. It’s a light yet satisfying meal perfect for a hot day, guaranteed to awaken your appetite.
Main Ingredients- 1 pack (290g) store-bought cold noodle broth
- 1 pack (300g) acorn jelly
- 30g fermented kimchi
- 1/2 cucumber
- 10cm piece of green onion
- A pinch of roasted seaweed flakes
- 1-2 Tbsp toasted sesame seeds (crushed)
Cooking Instructions
Step 1
Finely chop the kimchi with scissors into bite-sized pieces. Cutting them small ensures better flavor distribution and texture.
Step 2
In a bowl, combine the chopped kimchi with 0.3 Tbsp minced garlic, 0.5 Tbsp sesame oil, and 0.5 Tbsp sugar. Mix well by gently massaging the ingredients together. Adjust the sugar amount based on the kimchi’s sourness and saltiness.
Step 3
Wash the cucumber thoroughly. You can peel it if desired, or leave the skin on for added texture and nutrients. Thinly julienne the cucumber. Finely chop the green onion.
Step 4
Bring a pot of water to a boil and add the acorn jelly. Blanch for approximately 5 minutes. If you have cut the acorn jelly in half lengthwise before blanching, reduce the cooking time to 2-3 minutes. This step helps to soften the jelly’s texture.
Step 5
After blanching, rinse the acorn jelly briefly in cold water. Let it cool slightly, then slice it into your desired serving size. Avoid cutting it too long so it integrates well with the broth.
Step 6
In a serving bowl, artfully arrange the sliced acorn jelly, julienned cucumber, chopped green onion, seasoned kimchi, a pinch of seaweed flakes, and 1-2 Tbsp of crushed toasted sesame seeds.
Step 7
Finally, pour the chilled cold noodle broth over the ingredients. Your delicious Kimchi Acorn Jelly Bowl is ready to be enjoyed! For an extra zing, consider adding a dash of vinegar or mustard paste to your preference.
